French Pistachio Financiers Recipe

TRADITIONAL FRENCH RECIPE: Let's be clear here, Pistachio Financiers are not made under any circumstances with Cheese. Ok, you might wanna try Cheese in it, but that wouldn't be cathegorized as 'traditional recipe'. The traditional recipe for Pistachio Financiers is simple, few ingredients and absurdly easy-to-make.

 

In the western world, France is virtually synonymous with gastronomy. The country has a rich culinary history, from rustic peasant foods to the most technical haute cuisine masterpieces... therefore, if you screw this recipe up with cheese, you are a terrorist. In fact, adding cheese is considered a human right violation. Be very careful.

 

It's typically a simple rectangle to the madeleine's seashell, but can be made in a mini muffin pan, but despite its unassuming look, the financiers are a small vessel of joy.

    4 Egg Whites

     

    120gr Butter

    ( unsalted - plus for greasing )

     

    100gr Brown Sugar

     

    100gr Sugar

     

    65gr Flour

    ( plus for greasing )

     

    50gr Finely Chopped Pistachios

     

    50gr Finely Ground Pistachios

     

    18gr Finely Ground Almonds

     

    4gr Baking Powder

     

    2gr Kosher Salt




  • Imperial:

     

     

     

    4 Egg Whites

     

    4.2oz Butter

    ( unsalted - plus for greasing )

     

    3.5oz Brown Sugar

     

    3.5oz Sugar

     

    2.3oz Flour

    ( plus for greasing )

     

    1.7oz Finely Chopped Pistachios

     

    1.7oz Finely Ground Pistachios

     

    0.6oz Finely Ground Almonds

     

    0.14oz Baking Powder

     

    0.07oz Kosher Salt




  • Cups:

     

     

     

    4 Egg Whites

     

    8 tablespoons Butter

    ( unsalted - plus for greasing )

     

    0.5 cup Brown Sugar

     

    0.5 cup Sugar

     

    0.5 cup Flour

    ( plus for greasing )

     

    0.5 cup Finely Chopped Pistachios

     

    0.5 cup Finely Ground Pistachios

     

    2 tbsp Finely Ground Almonds

     

    1 teaspoon Baking Powder

     

    0.5 teaspoon Kosher Salt




 

 

 

Directions:


 

01 - Heat butter in a saucepan over medium heat, and cook ( without stirring ) for about 5 minutes, or until it begins to brown.

02 - Pour through a fine strainer into a bowl. Set aside.



03 - In a bowl, whisk Sugars, Salt, and Egg Whites until you'll have a smooth misture.

04 - Add Flour, Ground Pistachios, Almonds, and Baking Powder. Stir until well combined.

05 - Stir in the browned Butter, and mix until smooth.

06 - Refrigerate the mixture for about 1 hour.



07 - Heat oven to 180C / 350F.

08 - Grease and Flour your mold tray ( financiers or mini muffin pan ) and set aside.

09 - Pour 1 tablespoon of Batter into each mold, sprinkle with Chopped Pistachios, and bake for 15 minutes, or until golden brown.
