TRADITIONAL AMERICAN RECIPE: Yes, they are deep fried. And you all well know what I think ( by the way, opinions are useless, mine too ) and what the science says: frying food is unhealthy and dangerous.

 

Said so, today i'm gonna eat Apple fritters.

 

There are some twists you can do to make this recipe even better, for instance, core, peel, and chop your apples, then submerge them in ice-cold water with 2 teaspoons of lemon juice to prevent them from browning. Push the apples down and place a piece of parchment paper or a plate on top so the apples don't bob above the surface of the water. You can do this the night before so the apples are ready to go when you're ready to fry.

 

For the deep-frying, be careful here. It takes a second to ruin everything. You want to do your best and keep the oil at a steady 360°F. If it's too low, your fritters will absorb too much oil and become sodden; too high and the outsides will end up burnt, or worse, appear to be finished with a nice golden browning while the inside is still doughy. Use the right tools: a deep frying thermometer is a must for eliminating guess-work, use an Asian-style spider spatula ( not tongs ) to remove the finished fritters. If you don't have a spider, a very wide slotted spoon will also work so the fritter doesn't slip off and fall back in the oil with enough splash to splatter your tender skin. Don't multi-task.

    200gr All-Purpose Flour

     

    150ml Whole mMilk

     

    70gr Brown Sugar

     

    1 Egg

     

    40gr Powdered Sugar

     

    30gr Butter

    ( melted )

     

    10ml Vanilla Extract

     

    8gr Baking Powder

     

    1.5gr Salt

     

    1gr Cinnamon

     

    1gr Nutmeg

     

     

     

    Vegetable Oil

    ( or Corn Oil - for frying )




  • Imperial:

     

     

     

    2 Sour Apples

    ( diced )

     

    7oz All-Purpose Flour

     

    5.2oz Whole mMilk

     

    2.4oz Brown Sugar

     

    1 Egg

     

    1.4oz Powdered Sugar

     

    1oz Butter

    ( melted )

     

    0.35oz Vanilla Extract

     

    0.28oz Baking Powder

     

    0.05oz Salt

     

    0.03oz Cinnamon

     

    0.03 Nutmeg

     

     

     

    Vegetable Oil

    ( or Corn Oil - for frying )

    2 Sour Apples

    ( diced )

     

    1.33 cups All-Purpose Flour

     

    0.66 cup Whole mMilk

     

    0.33 cup Brown Sugar

     

    1 Egg

     

    0.33 cup Powdered Sugar

     

    2 tablespoons Butter

    ( melted )

     

    2 teaspoons Vanilla Extract

     

    2 teaspoons Baking Powder

     

    0.25 teaspoon Salt

     

    0.5 teaspoon Cinnamon

     

    0.25 teaspoon Nutmeg

     

     

     

    Vegetable Oil

    ( or Corn Oil - for frying )




 

 

 

Directions:


 

01 - In a bowl, sift Flour, Baking Powder, Brown Sugar, Cinnamon, Nutmeg, and Salt. Set aside.

 

02 - In a second bowl beat together Milk, Egg, Vanilla and Melted Butter.

 

03 - Very slowly, combine the two bowls together pouring the Flour mix into the Milk misture. Stir well until smooth and lump free.

 

04 - Mix the Diced Apples into the Batter ( second bowl ).

 

05 - In a large cast iron skillet ( or a Dutch Oven ) heat over medium heat 5cm / 2in of Oil.

 

06 - Check whether the Oil is ready by dropping a small amout of Batter in. It it fries, it's ready.

 

07 - Fry the Apples in small chuncks until golden brown.

 

08 - Remove the Fritters from the pan using long chopsticks or a heat resistant spatula.

 

09 - Drain on kitcken paper and line them on an oven rack to cool.

 

10 - Once cooled slightly sprinkle with Powdered Sugar. Serve immediately.





Notes:


 

- Be careful not to crowd the fritters in the pan.

 

- Instead of the Powdered Sugar you can use some Glaze.
