Japanese Easy Kakuni Recipe (Braised Pork Belly Recipe - 角煮)

TRADITIONAL JAPANESE RECIPE: Kakuni literally means "square simmered", due to its shape and the way is cooked. Even for those that don't really enjoy fatty dishes, this might be ok due to its unique flavour.

After trying multiple Kakuni, we've discovered that the trick to the best Kakuni recipe is the simmering. It usually takes 2 to 3 hours to simmer the meat, but because this is an Easy Kakuni recipe, we'll have to cut it down to 40-60 minutes. Simmering for 1 hour will still give you that melt-in-your-mouth texture we all love.

Any Kakuni Recipe is quite time consuming but is worth it.

    2L. Water
    (for boiling Spinach)

    800ml Water

    600g Pork belly
    ( block )

    140ml Soy Sauce

    120g Honey

    100ml Sake

    100g Spinach

    36g Sugar

    2 Green part of Green Onion

    1 Ginger




  • Imperial:

     

     

     

    4.40lb Water
    (for boiling Spinach)

    1.76lb Water

    1.32lb Pork belly
    ( block )

    4.93oz Soy Sauce

    4.23oz Honey

    3.52oz Cooking Sake

    3.52oz Spinach

    1.26oz Sugar

    2 Green part of Green Onion

    1 Ginger




  • Cups:

     

     

     

    8 cups Water
    (for boiling Spinach)

    3 cups Water

    2 blocks Pork belly
    ( block )

    0.5 cup Soy Sauce

    6 tablespoons Honey

    0.5 cup Cooking Sake

    1 bunch Spinach

    3 tablespoons Sugar

    2 Green part of Green Onion

    1 Ginger




 

 

 

Directions:


 

01 - Without peeling it, cut the Ginger into thin slices. Place in a small bowl and set aside.

02 - Now, cut the Pork Belly into 5cm / 2in widths, and set aside.

03 - Cut off the roots from the Spinach.

04 - In a medium pan, boil the Water and add the Spinach. Boil for about 30 seconds or until the Spinach become soft.

05 - Rinse the Spinach with a colander and cool them under running water.

06 - Squeeze the Water out of the boiled Spinach and cut into 4cm / 1.5in width.

07 - Put the Pork Belly (a couple of pieces at a time) in a frying pan heated on high heat. Cook until the whole surface of the Pork Belly is browned, and wipe off excess fat with some kitchen paper.

08 - Add to the pan the green part of the Green Onion, Ginger and Water, cooking Sake, Soy Sauce, Honey and Sugar, and cook at medium heat. As soon as it start boiling, cover with lid and simmer on low heat for about 40-60 minutes, until the Pork Belly is tender.

09 - Serve the Kakuni Braised Pork Belly in a bowl with Spinach and some topping of your liking.





Notes:


 

- By using the Green part of the Green Onion (STEP 08), the scent will be more accentuated.

- This recipe uses Honey. Please be careful not to consume it for toddlers and infants.

- Honey can be replaced with Sugar. The sweetness varies depending on the type, so it's up to you to adjust it to your own liking.

- Consider using Sake if you are cooking this recipe for kids.
