French Gruyere Toasties Recipe

TRADITIONAL FRENCH RECIPE: this humble french cheese toastie recipe (or grilled cheese as it's commonly known in America) is a comfort food and guilty pleasure like no other.

 

But how do you nail that perfect combination of creamy filling and crispy bread? Here's the traditional french recipe.

Ingredients:

  • Metric:

     

     

     

    500gr Sweet Onion

    ( sliced )

     

    500ml Beef Stock

     

    8 Slices French Bread

     

    250ml Red Wine

     

    130gr Gruyère Cheese

     

    60gr Unsalted Butter

    ( divided per portions )

     

    30ml Brandy

     

    Sprig Fresh Thyme Leaves

    ( stripped from the stem )

     

    Salt and Ground Pepper

    ( to taste )




  • Imperial:

     

     

     

    1.1lb Sweet Onion

    ( sliced )

     

    1.1lb Beef Stock

     

    8 Slices French Bread

     

    8.8oz Red Wine

     

    4.5oz Gruyère Cheese

     

    2.1oz Unsalted Butter

    ( divided per portions )

     

    1oz Brandy

     

    Sprig Fresh Thyme Leaves

    ( stripped from the stem )

     

    Salt and Ground Pepper

    ( to taste )




  • Cups:

     

     

     

    2 cups Sweet Onion

    ( sliced )

     

    2 cups Beef Stock

     

    8 Slices French Bread

     

    1 cup Red Wine

     

    1 cup Gruyère Cheese

     

    4 tablespoons Unsalted Butter

    ( divided per portions )

     

    2 tablespoons Brandy

     

    Sprig Fresh Thyme Leaves

    ( stripped from the stem )

     

    Salt and Ground Pepper

    ( to taste )




 

 

 

Directions:


 

01 - Melt half of the Butter in a large skillet over medium heat.

 

02 - Add the Onions and some Salt, and cook fpr about 10 minutes or until the Onions start to golden. Add some water if it burns.

 

03 - Pour the Brandy into the pan with the Onions and continue cooking until it has completely evaporated.

 

04 - Add Beef Stock and Thyme and cook for about 5-10 minutes or until the Stock has reduced by half. Season generously with Salt and Pepper.

 

05 - In the meantime, in a second skillet on medium heat, heat the remaining Butter.

 

06 - Place two slices of Bread on the skillet.

 

07 - Add a handful of Gruyere Cheese and wait till it melts a little.

 

08 - Flip the Bread and top with the Onion mixture.

 

09 - Put on top the remaining Bread Slice, and cook, until the Cheese is melted and each side is golden brown.
