Ok, let's just say that it will be one of the best mousse you'll ever try. Made with only a handful of ingredients, this rich, silky mousse brightened with tangy lemons mousse makes an elegant end to a meal.

8 Eggs
250gr Sugar
235gr Heavy Cream
Juice and Zest of 4 Lemons
5gr Vanilla Extract
2gr Kosher Salt
Cups:
8 Eggs
1.25 cups Sugar
1 cup Heavy Cream
Juice and Zest of 4 Lemons
1 teaspoon Vanilla Extract
0.5 teaspoon Kosher Salt
Directions:
01 - In a saucepan, whisk together 4 Eggs, 4 Yolks ( reserving remaining Egg Whites ), and 200gr / 7oz / 1 cup Sugar.
02 - Add Salt, Lemon Juice and Lemon Zest and stir until well combined.
03 - Place the saucepan over medium heat and cook for about 10 minutes, constantly stirring, until mixture thickens to the consistency of loose pudding.
04 - Pour through a fine strainer into a large bowl, and chill.
05 - Combine Egg Whites and the remaining Sugar in a bowl, and with an electric mixer, whisk untl stiff peaks form.
06 - Mix Egg Whites with the chilled mixture ( direction 1 to 4 ). Fold gently until combined. Set aside.
07 - Whisk Cream and Vanilla in a bowl until stiff Peaks Form. And add to the previous made mixture ( direction 6 ). Fold until combined.
08 - Spoon the Mousse into 8 serving cups and chill for a few hours before serving.
