Make your own homemade Tomato Pizza Sauce and you are good to go!
For this recipe I've used dried Pizza Mozzarella Cheese. Not the wet one sold inside the bag full of water, but the dried one. But you can use whatever you want, don't listen to me! ;)
Provolone Cheese is a good alternative to Mozzarella Cheese. This is the beauty of this recipe, it's easy and you can twist it the way you want. If you don’t have one of the ingredients you can replace for something that you have and you will end up with a flavorful and nutritious appetizer.
For this recipe I also used my homemade a Pizza Tomato Sauce recipe, because I just think everything tastes even better when you make it from scratch. If you want you can use any type of tomato like for example cherry tomatoes. Cooked or fresh.

Try to make this for a quick and healthy lunch or even dinner because who doesn’t like pizza flavors anytime of the day, right? I do, especially when it's one of those days i can't be bother to cook.

2 Large Eggplants

0.50 cup Pizza Sauce
0.50 cup Mozzarella
( shredded )
0.25 cup Parmesan Cheese
Salt & Black Pepper

Directions:
01 - Wash and cut slice the Eggplants.
02 - Broil or grill the Eggplants rounds for 2 minutes each side.
03 - Place the Eggplants on a large lined baking sheet.
04 - Top with small amounts of Pizza Sauce ( Recipe Here ) and Cheese.
05 - Add extra topping, if desired.
06 - Cook in the oven until Cheese is melted, careful not to burn.
07 - Sprinkle with Salt & Pepper ( to taste ).
Notes:
- To make larger rounds, slice Eggplants diagonally.
- To melt the Mozzarella you can also place a top or a frying pan upside-down on the grill, and cook for 2 minutes. Make sure not to burn the Eggplants.
