TRADITIONAL ITALIAN RECIPE: If you have spent enough time on this website you have already discovered that not all pizza Sauce is created equal... just like law, it is never equal to everyone.
This is a basic and easy way to make Pizza Sauce. You'll love this Sauce because if we’re in a hurry you can use it right away and it only takes 15 minutes to make ( although i don't think it is a good
idea ), but if you have time let it cook for a while.
This Sauce is not spicy like some restaurants do. This is the real Original Italian Pizza Sauce. his Sauce is just magical perfection.
Ths Sauce works well for 4-5 medium sized Pizze. The recipe can easily be doubled... the quantities are easy, you can adjust the quantity of herbs to your like.
Remember to use high wuality Olive Oil. And guess what? You also want to use a good quality Tomato(es). You can use fresh Tomatoes if you like, but it’s probably best to do so when they’re in season. Otherwise you’re better off using a canned tomato in terms of flavor. I’m using San Marzano Tomatoes, which is the best you can find. This is what they use in Naples.
You can also use an immersion stick blender and just pulse fresh Tomatoes here and there until some of them are broken down. I don’t suggest a jug blender as they would become totally mushed.

( or half Passata and half regular Tomato Sauce )
6 tablespoons Olive Oil
Pinch of Salt
Fresh Basil
Optional:
Sugar
( to remove the tomato's acidity )
Directions:
01 - In a saucepan, heat Passata over a medium-low heat until hot; about 5 minutes.
02 - Add Extra-Virgin Olive Oil stir and cook for extra 10 minutes over low heat.
03 - Add Basil and Salt ( and Sugar is the Tomato Sauce is too acid ).
04 - Cook for more 5 minutes. Use on Pizza or Pasta.
Notes:
- This Sauce can be stored in fridge for 2 or 3 days.
- If you decide to use the Basil for you Pizza Sauce then, you can leave some Basil Leaves inside the Oil the day before. In this way the Oil will automatically have a soft Basil flavour.
- Some people in Italy do not cook the "Passata", putting it straightaway on the pizza dough. This is ok, but some canned or bottled Tomato Sauce have high level of bacteria, so you might want to consider this before doing so.
