Mashed Potatoes Recipe

TRADITIONAL AMERICAN RECIPE: Mashed potatoes can be served together with other dishes, or can be an ingredient of various other dishes, including shepherd's and cottage pie, pierogi, colcannon, dumplings, potato croquettes, gnocchi, etc.. It is often served with sausages in the British Isles, often known as bangers and mash.

A potato masher is a utensil which can be used to prepare the potatoes, as is a potato ricer.

One French variation adds egg yolk for pommes duchesse or Duchess potatoes; piped through a pastry tube into wavy ribbons and rosettes, brushed with butter and lightly browned. Pomme purée (potato puree) uses considerably more butter than normal mashed potato - up to two parts potato for one part butter.

In low-calorie or non-dairy variations, milk, cream and butter may be replaced by soup stock or broth. Aloo Bharta, an Indian sub-continent variation, uses chopped onions, mustard (oil, paste or seeds), chili pepper, coriander leaves and other spices.

    1 cup Milk

( Cow, Soy, Almond or Rice Milk )

    0.25 cup Butter

Directions:

01 - Wash the Potatoes.

02 - Place the Potatoes ( with skin on ) in a pot of boiling salted water, and cook them for about 30 minutes, or until very soft. The skin will not let the Potatoes absorb too much water, and it will be easier to peel them.

03 - Once the Potatoes have cooked, drain them and cool their skin under cold runnign water for 1 minute.

04 - Peel the Potatoes simply by removing their skin by hand ( if they are well cooked the skin should come off very easily ).

05 - Using a potato ricer or a food mill, mash the Potatoes in the same pot you have cooked them in.

06 - Add the Milk and stir everything over a low heat.

07 - Add Butter, Salt, Black Pepper and Cheese if used.

Notes:

- You can store the leftover Smashed Potatoes in the fridge, sealed inside a plastic container or in a wrapped bowl for 24 hours. Reheat it, add a little bit of Milk and serve.
