TRADITIONAL AMERICAN RECIPE: you won't need to call yourself a Uncut Recipes to make something simple, yet delicious, but keep in mind this simple rule when it comes to Lemon Pasta Salad recipe: use only fresh vegetables and the best extra virgin olive oil you can find.

    400gr Asparagus

     

    400gr Cherry Tomatoes

    ( halved )

     

    400gr Corkscrew Pasta

     

    150gr Crumbled Feta Cheese

     

    130gr Frozen Peas

    ( defrosted )

     

    50gr Dijon Mustard

     

    50ml Extra-Virgin Olive Oil

     

    50ml Fresh Lemon Juice

     

    5gr Dill Leaves

    ( chopped )

     

    1 Garlic Clove

    ( minced )

     

    Salt

     

    Freshly Ground Black Pepper




  • Imperial:

     

     

     

    0.8lb Asparagus

     

    0.8lb Cherry Tomatoes

    ( halved )

     

    0.8lb Corkscrew Pasta

     

    5.2oz Crumbled Feta Cheese

     

    4.5oz Frozen Peas

    ( defrosted )

     

    1.7oz Dijon Mustard

     

    1.7oz Extra-Virgin Olive Oil

     

    1.7oz Fresh Lemon Juice

     

    0.17oz Dill Leaves

    ( chopped )

     

    1 Garlic Clove

    ( minced )

     

    Salt

     

    Freshly Ground Black Pepper




  • Cups:

     

     

     

    2 cups Asparagus

     

    2 cups Cherry Tomatoes

    ( halved )

     

    5 handfuls Corkscrew Pasta

     

    1 cup Crumbled Feta Cheese

     

    1 cup Frozen Peas

    ( defrosted )

     

    2 tablespoons Dijon Mustard

     

    0.25 cup Extra-Virgin Olive Oil

     

    0.25 cup Fresh Lemon Juice

     

    0.25 cup Dill Leaves

    ( chopped )

     

    1 Garlic Clove

    ( minced )

     

    Salt

     

    Freshly Ground Black Pepper




 

 

 

Directions:


 

01 - Start boiling the Pasta into salted water.

 

02 - In a large pan, boil in salted water the Asparagus for 3 minutes, or until slightly tender.

 

03 - Remove the Asparagus with a slotted spoon and place them in icy cold water for 30 seconds.

 

04 - Remove them from the icy cold water and dry well.

 

05 - Trim the ends of the Asparagus and cut into bite-size pieces.

 

06 - In a small bowl, combine the Mustard, Garlic, Lemon Juice and Olive Oil.

 

07 - Season the Mustard mixture with Salt and Pepper and set aside.

 

08 - Turn the heat off and drain the Pasta al dente and combine wit the Asparagus.

 

09 - Move the Pasta into a large Salad Bowl.

 

10 - Add the Tomatoes, Dill, Peas, Feta, and the Mustard Dressing.

 

11 - Toss to coat. Serve.
