TRADITIONAL AMERICAN RECIPE: Corn with Chili Lime Butter can be served together with other dishes, or can be an ingredient of various other dishes, including shepherd's and cottage pie, pierogi, colcannon, dumplings, potato croquettes, gnocchi, etc.. It is often served with sausages in the British Isles, often known as bangers and mash.

 

While you may not be used to grilling corn, you will find it to be remarkably simple. It's even quicker than boiling. The contrasting flavors of this easily prepared seasoned butter make this recipe so much more than ordinary corn-on-the-cob.

    4 Corns

    ( husked )

     

    100gr Butter

    ( at room temperature )

     

    1 Lime

    ( zest )

     

    1 Lime

    ( juice )

     

    6gr Chili Powder

     

    2gr Cayenne Pepper

     

    Kosher salt

     

    Freshly Ground Black Pepper




  • Imperial:

     

     

     

    4 Corns

    ( husked )

     

    3.5oz Butter

    ( at room temperature )

     

    1 Lime

    ( zest )

     

    1 Lime

    ( juice )

     

    0.2oz Chili Powder

     

    0.07oz Cayenne Pepper

     

    Kosher salt

     

    Freshly Ground Black Pepper




  • Cups:

     

     

     

    4 Corns

    ( husked )

     

    0.5 cup Butter

    ( at room temperature )

     

    1 Lime

    ( zest )

     

    1 Lime

    ( juice )

     

    2 teaspoons Chili Powder

     

    0.25 teaspoon Cayenne Pepper

     

    Kosher salt

     

    Freshly Ground Black Pepper




 

 

 

Directions:


 

01 - Heat a grill pan.

 

02 - When ready wrap the Corn in baking paper and place on the grill ( or into the oven ) and cook until tender and slightly charred, about 20 minutes.

 

03 - Remove from the grill ( or oven ) and let cool for 3 to 5 minutes.

 

04 - In a small bowl, whisk together ( almost all ) Butter, Chili Powder, Cayenne Pepper, Lime Zest, and Lime Juice until thoroughly combined.

 

05 - Lightly Butter the Corn with the remaining Butter and season with Salt and Pepper to taste.

 

06 - Grill ( or bake ) for an extra 5 minutes.

 

07 - Slather each Corn in the Chili-Lime Butter one more time, and serve.





Notes:
