TRADITIONAL AMERICAN RECIPE: Blueberry muffins are as American as Apple Pie, actually is even MORE American than the Apple Pie itself since muffins were born and bred in the US, unlike the immigrant Apples and its medieval crust.
Have you ever seen 18th century muffins? I had, not because I'm 350 years old, but because I googled it. They are horrible flat creatures. Fortunately the late 19th century came along and the recipe changed, or someone died. Thing is, Muffins suddenly changed and turned into small cakes.
Researching, however, I discovered that the giant muffin is a recent phenomenon: according to the American Century Cookbook, in the 70s and 80s muffin madness set in they exploded to three or four times their normal size. That's where I usually start crying and craving for one of those Muffin Cakes.
When you are making a Muffin you should consider two approaches:
- The Cramy method: creaming the butter and sugar together, as if making a cake, and the far simpler quickbread method, which simply folds the wet ingredients into the dry ones, shoves the lot in the oven and has a cup of tea. Not something that comes easily to the conscientious baker who feels there must be more to it than that.
- And, the combining method: which is ridiculously quick, although you'll get a better rise using the creaming technique.
Whichever you use, beating the liquid ingredients together well, before you finally combine them with the flour and raising agents, is vital, because overworking the batter will encourage gluten formation, which makes for a tough muffin. And that's even worse than a tough cookie.

Cups:
0.5 cup Blueberries
0.5 cup Plain Flour
5 tablespoons Butter
2 Eggs
0.25 cup Caster Sugar
1.5 teaspoons Baking Powder
Pinch Nutmeg
Directions:
01 - Cream the Butter and Sugar together.
02 - Slowly add the Eggs, mixing for three minutes.
03 - Add the Flour, Baking Powder, Nutmeg, and stir everything well.
04 - Refrigerate the mixture for 1 hour, preferably overnight.
05 - Place a spoonful of Muffin mixture into each muffin case, filling each to just over half way.
06 - Put into each Muffin about eight Blueberries.
03 - Bake in an oven set at 200C / 392F for 20 minutes, or until golden on top and serve.
Notes:
- Squeeze some Jam into the Muffins for an extra orgasm! ;)
