Japanese Ujikintoki Green Tea Shaved Ice ( 宇治金時 ) Recipe

TRADITIONAL JAPANESE RECIPE: Ujikintoki is a Japanese shaved ice dessert, made with shaved ice on the bottom, drizzled with green tea syrup and topped with Red Bean Paste Anko. Other common toppings include Shiratama Dango Mochi, sweetened condensed milk, and green tea ice cream. On a hot and humid summer day, eating shaved ice brings immediate refreshment and cools you down.

Typical shaved ice you see are made with fruity flavors like strawberry, melon, lemon, blue-hawaii, and they can be purchased at the summer festivals and food stalls in Japan.

It’s a quick dessert that literally takes just a few minutes to put together if you have all the ingredients.

    (for Shaved Ice )

    100gr Red Bean Paste Anko

    Shiratama Dango Mochi

    Green Tea Ice Cream

    40gr Sweetened Condensed Milk


    Matcha Syrup:

    50gr Sugar

    30gr Hot Water

    6gr Matcha Green Tea Powder




  • Imperial:

     

     

     

    Ice
    (for Shaved Ice )

    3.5oz Red Bean Paste Anko

    Shiratama Dango Mochi

    Green Tea Ice Cream

    1.4oz Sweetened Condensed Milk


    Matcha Syrup:

    1.7oz Sugar

    1oz Hot Water

    0.2oz Matcha Green Tea Powder




  • Cups:

     

     

     

    Ice
    (for Shaved Ice )

    0.33 cup Red Bean Paste Anko

    Shiratama Dango Mochi

    Green Tea Ice Cream

    2 tablespoons Sweetened Condensed Milk


    Matcha Syrup:

    4 tablespoons Sugar

    2 tablespoons Hot Water

    1 tablespoon Matcha Green Tea Powder




 

 

 

Directions:


 

01 - Combine Sugar and Matcha Green Powder in a small bowl and whisk together.

02 - Add the Hot Water and whisk until Sugar is completely melted. Let it cool in the freezer but not freeze.

03 - Put the ice cube in the machine and shave it.

04 - Pour some Green Tea Syrup in each bowl, add Red Bean Paste Anko and place the Shiratama Dango Mochi.

05 - Put a scoop of Ice Cream on top to make the shaved ice creamier and pour a little bit of Sweetened Condense Milk.

 

 

 

Notes:


 

- You can leave the shaved ice plain or top it with Red Bean Paste Anko and/or Sweetened Condensed Milk.
