Japanese Sweet Red Bean Paste Recipe - Anko ( 餡子 / あんこ ) Tsubuan ( 粒餡 )

TRADITIONAL JAPANESE RECIPE: Sweet red bean is one of the most important ingredients for Chinese dessert. Sometimes, they are wrapped up to make rice dumplings or steamed buns. Besides, it can also be used to make as red bean dessert directly. Besides, red bean can also be used to make TangShui–Red bean Soup.

Ingredients:

    400gr Azuki Beans

     

    300gr Sugar

     

    750ml Water ( x2 )

     

    Pinch of Salt




  • Imperial:

     

     

     

    14.1oz Azuki Beans

     

    10.5oz Sugar

     

    1.6lb Water ( x2 )

     

    Pinch of Salt




  • Cups:

     

     

     

    2 cups Azuki Beans

     

    2 cups Sugar

     

    4 cups Water ( x2 )

     

    Pinch of Salt




 

 

 

Directions:


 

01 - Put the Beans in a pot with 4 cups of Water and soak them overnight ( 12 hours ).

 

02 - Rinse the Beans.

 

03 - Let boil for 5 minutes. Turn the heat off and let it rest for 2 minutes.

 

04 - Remove all the Water.

 

05 - Move the Beans in a clean pot and add 4 cups of Water. Cover, and let it simmer at low heat for 1.5 hours, adding more Water as needed.

 

06 - Add Salt and Sugar and turn off the heat once the mix has thickened ( it should take about 10 minutes ).

 

07 - As soon as the paste looks shiny and soft enough, move it to a container, let it cool and place it in the fridge.





Notes:


 

- At direction number 5, the Beans should be very soft, easily crushed between fingers.

 

- You can divide the Paste into 100g portions and store in the freezer for 1 month, or in fridge for a week.
