TRADITIONAL JAPANESE RECIPE: Egg Salad is probably the easiest thing to prepare, so don't be afraid. Sandwiches are not something you'd normally eat in Japan, everybody knows it, but this particular one has even made it outside Japan, becoming an international sensation. It's called Tamago Sando (たまごサンド). It is basically the grab-and-go Japanese egg sandwich that is sold everywhere at conbini/ the convenience stores in Japan.
Tamago (たまご) means eggs and Sando is a short for San-doh- itchi (サンドイッチ) sandwich in Japanese
Tamago Sando (たまごサンド) is a very humble snack, modest, low maintenance and very convenient.
The Japanese Egg Sandwich is simpler than its American counterpart, usually just boiled and smashed Eggs between bread. There is no lettuce or anything added in. Of course, you'll have to try to find Japanese Mayonnaise and very very fresh Eggs... and of course, add Milk for a creamy and smooth texture.

4 tablesppoons Japanese Mayonnaise
4 teaspoons Milk
0.5 teaspoon Sugar
0.5 teaspoon Salt
( use half for table salt )
Freshly Ground Black Pepper
Directions:
01 - Boil the Eggs in a medium saucepan for about 12 minutes, making sure the Water covers the Eggs.
02 - Once they're ready, transfer the Eggs into iced water to stop them cooking and let them cool completely.
03 - Peel the Egg Shells.
04 - Put the peeled Eggs in a bowl and mash them with a fork into small pieces.
05 - Add Sugar and Salt and mix well.
06 - Add Freshly Ground Black Pepper and Milk and mix well.
07 - And finally, add Mayonnaise and mix once more.
To Assemble:
08 - Spread the Butter on both sides of bread.
09 - Evenly distribute the Egg Salad on one side of the bread.
10 - Put the other slice of bread on top and place the sandwich between two plates. Set aside for 5 minutes.
11 - Cut the Crusts off the bread.
12 - Slice the Sandwich in half. Serve.
Notes:
- Before you assemble the sandwich, taste and add more Salt and Pepper if needed.
