ITALIAN RECIPE: It’s impossible to stop at one of these awesome Zucchini Pizza Bites with classic Pizza Sauce and molten Mozzarella! They’re a healthy! At least 80% Healthy!
This recipe is an oldie, but goodie! I had a big Zucchini that needed using up and I was sooo in the mood for these yummy (and guiltless) Zucchini Pizza Bites!! A perfect way to use up all the Zucchini in your garden and satisfy your craving for Pizza.
I make these quite often, sometimes for lunch or as snack.
Gather your ingredients. Most should be in your fridge/pantry, except for the zucchini. I am planning on planting some this year in my garden. They are very easy to grow.

Directions:
01 - Wash and cut slice the Zucchini.
02 - Broil or grill the Zucchini rounds for 2 minutes each side.
03 - Place the slices on a large lined baking sheet.
04 - Top with small amounts of Sauce and Cheese.
05 - Add extra topping, if desired.
06 - Cook in the oven until Cheese is melted, careful not to burn.
07 - Sprinkle with Salt & Pepper ( if required )
Notes:
- To make larger rounds, slice the Zucchini diagonally.
- To melt the Mozzarella you can also place a top or a frying pan upside-down on the grill, and cook for 2 minutes. Make sure not to burn the Zucchini.

It work with one of those small gas japanese ovens. Medium temperature for about 3 minutes.
