Spaghettoni with Fresh Tomatoes

TRADITIONAL ITALIAN RECIPE: I’ve made a variation this time, using bigger spaghetti. These are called Spaghettoni, which means "big spaghetti". This is a killer Fresh Tomato Sauce Spaghetti Recipe using only cherry tomatoes, olive oil and garlic... and awesome tasty spaghetti.

 

I’ve made a bazillion different variations, all equally as delicious, but this one is somehow special. Not only because it’s simple and delicious, but because the cooking time from start to finish is less than 30 minutes – pure gold in my book.

 

The sauce starts with a small army of thinly sliced garlic that take a bath in hot, but not screaming hot olive oil. Two pounds of lasrge cherry ( or small ) tomatoes are then thrown in, the heat is cranked up, and you just watch as the hot oil works it’s magic on the tomatoes, making them blister and explode as they cook.

 

I like to help the process along a little bit by adding a ladle full of starchy pasta water and a good amount of kosher salt.

 

The sauce simmers for a few minutes, and then slightly undercooked Spaghettoni is tossed with the burst tomatoes. Since the Spaghettoni are underdone, you'll have to finish cooking it in the sauce, infusing SO much flavor into each strand of pasta.

 

Once everything is melded together, I toss in a good handful of parmesan cheese, about a cup of fresh basil and more pasta water if need be.

 

Simple. Fresh. And seriously delicious.

    400gr Spaghettoni
    ( thick Spaghetti )

     

    400gr Large Cherry Tomatoes

     

    120ml Extra Virgin Olive Oil

     

    4 Garlic Cloves
    ( chopped )

     

    Basil Leaves

     

    Salt




  • Imperial:

     

     

     

    0.88lb Spaghettoni
    ( thick Spaghetti )

     

    0.88lb Large Cherry Tomatoes

     

    4.2oz Extra Virgin Olive Oil

     

    4 Garlic Cloves
    ( chopped )

     

    Basil Leaves

     

    Salt




  • Cups:

     

     

     

    5 handfuls Spaghettoni
    ( thick Spaghetti )

     

    12~16 Large Cherry Tomatoes

     

    8 tbsp Extra Virgin Olive Oil

     

    4 Garlic Cloves
    ( chopped )

     

    Basil Leaves

     

    Salt




 

 

 

Directions:


 

01 - Boil the Spaghettoni in some salted water.

 

02 - Heat the Oil in the Pan and cook on low flame add the Garlic ( chopped ) for a couple of minutes. Do not burn.

 

03 - Add the Cherry Tomatoes ( gently sqeezed ) and Salt, and cook for another couple of 5 minutes.

 

04 - Turn the fire of the Sauce off and put some Basil in and mix well.

 

05 - Drain the Spaghetti, combine them with the Sauce. Serve.

 

 

 

Notes:

 

- Basil has to be fresh. Not dried Basil.
