TRADITIONAL ITALIAN RECIPE: My garden produces so much late-summer zucchini that i'm lacking of ideas on how to use them.
This time I've decided to slice and grill the Zucchini and then add them into the sauce, to give the sauce that burned/grilled retro-flavour... a favorite of mine.
While the pasta water heats, using another grill, you can even grill a couple of fresh cherry tomatoes and red onions. Up to you. That could be a nice twist I just thought about.
Toss some of the sauce with the grilled zucchini, and the whole sauce with the pasta. Although you could sprinkle with the usual Parmesan, this time plain is way better.

360gr Tomato Sauce
2 Zucchini

5 handfuls of Spaghetti Pasta
3 cups Tomato Sauce
2 Zucchini
4 tbls Extra Virgin Olive Oil
0.5 Onion
2 Garlic Cloves
1 teaspoon Basil
Directions:
01 - Slice and grill Zucchini.
02 - Grill the Zucchini slices.

Nearly place all the grilled Zucchini slices in a bowl and cover with Oil. Set aside.
(
By doing this you will allow the Oil to build a strong "zucchini grilled" taste )
04 - Turn the heat off and leave some Zucchini slices in to dry.
05 - Using a frying pan saute Garlic until golden.
06 - Add Tomato Sauce, Salt and Basil to the frying pan and cook for 10 minutes. Use some water to avoid to burn the Tomato Sauce, do not use extra Oil, just water.
07 - Take a pot, and start boiling Spaghetti into some salted water.
08 - Mix Zucchini in Oil with Tomato Sauce in the pan and cook for an extra 5-10 minutes.
09 - Combine Pasta ( al dente ) and Zucchini Tomato Sauce.
10 - Add some dried Zucchini slices on top.
Serve.
Notes:
- The extra grilled and dried slices of Zucchini are not essential, but it could be a good way to use the leftover slices. Personally I never use the whole Zucchini, so I always have some left.
