TRADITIONAL ITALIAN RECIPE: Once the warmer months come around, I’m immediately drawn to a simpler way of cooking – lighter, healthier meals, fresh ingredients, less ingredients, and just an all around relaxed attitude.
When it's hot outside I don’t like anything too fussy or involved, and this 20 minute Cherry Tomato and Basil Pasta is the perfect example of what you might find on my dinner table in the summertime.
The secret of elevating this recipe from the simple to the sublime is to use the ripest cherry tomatoes and avoid overcooking them. If you can get hold of some fresh Basil... wait until you can.

400gr Cherry Tomatoes

400gr Spaghetti
70ml Extra Virgin Olive Oil
2 Garlic Cloves
16 Basil Leaves

About 30 Cherry Tomatoes
( depending on the tomatoes )
5 handfuls Spaghetti
5 tbsp Extra Virgin Olive Oil
2 Garlic Cloves
16 Basil Leaves
( to garnish )
Salt
Directions:
01 - In a large pot, boil some salted Water.
02 - Chop the Cherry Tomatoes in half or 4 ( depending on the tomatoes ), and half of the total Basil Leaves.
03 - In a large frying pan, saute the Garlic for 1 or 2 minutes.
04 - If the water in the pot is boiling, start cooking the spaghetti.
05 - Put the Cherry Tomatoes in the pan and cook them for 2 minutes, or until soften.
06 - Squash the Tomatoes with a fork and stir.
07 - Add a pinch of Salt and the chopped Basil Leaves.
08 - Cover the Pan and cook for a further three minutes.
09 - Drain the Spaghetti al dente and combine them with the Tomato Sauce.
10 - Add the remaining Basil Leaves and toss until the Pasta is coated in the sauce. Serve.
Notes:
- Garnish each plate with a couple of extra Basil Leaves.
