TRADITIONAL ITALIAN RECIPE: I have been scouting around for good classic recipes that include apples to celebrate my miserable life :P but could not find any. So, i decided to spend my morning working on this wonderful Rustic Italian Apple Cake, or as they called "Torta di Mele".

 

Mele of course translates as apples!

 

My plan is to welcome my kid when she comes back from school. I have a beautiful baby girl whos not allowed to eat junk food, but sometimes i treat her with one of my best recipes... as far as they are not as nasty as those with Nutella ( which i personally love ).

 

The cake itself is a very basic cake recipe, but the addition of organic apples I have been growing in the garden they are added to the cake, really adds a lot of flavor. Once baked, while the cake was still warm, I poked the top with a skewer to make tiny holes, and then spooned on a delicious warm natural thick cooked apple juice.

 

The result was a delicious, moist cake that you should certainly add to your file of favorites to make over and over again.

 

 

 

Rustic Apple Pie In Italy:

 

In Italy practically everyone knows Disney's Elvira "Grandma Duck" Coot, Donald Duck's grandmother.

Grandma Duck ( or "Nonna Papera" in Italy ) became the iconic American grandmother. She's spry, gets into all sorts of adventures, and yet bakes up beautiful pies. Her pie has taken on an almost mythical status in Italy and is considered quintessentially American.

 

She was so popular in Italy that a children's cookbook featuring her was published in 1970, called Manuale di Nonna Papera. It became a phenomenal success in Italy! Though it has authentic Disney illustrations, it was never published in American, and, in fact, its recipes were really quite Italian. Manuale di Nonna Papera is the source of many fond foodie memories for millions of Italians. To compliment a particularly lovely cake Italians will often say, "Pareva la torta di Nonna Papera!", it looks like a Grandma Duck pie!

 

 

 

This classic Italian apple cake recipe is a wonderful way to welcome the crisp days of autumn or the bst days of summer.

 

Lightly sweetened, "torta rustica di mele" ( rustic apple cake ) recipe lets the sweet-tart flavor of the apples shine through. This simple cake comes together and turns out beautifully. It's a recipe you'll return to again and again.

 

This is one of my rustic cakes recipe that can be enjoyed for breakfast or as a dessert and best of all it can be put together quickly with just a whisk. You could vary the fruit depending on your preference and use peaches, pears or plums, although I love to use apples in my version.

 

I sprinkle the top with a mixture of sugar and cinnamon, but you could also leave it plain and dust the top with icing sugar after it cools.

    Crust:

     

    125gr Flour

     

    50gr Butter

     

    50gr Solid Vegetable Shortening

     

    20gr Sugar

     

    3gr Salt

     

    Ice Water
    ( very cold water )

     

     

     

    Crunch Topping:

     

    50gr Brown Sugar

     

    35gr Butter
    ( melted )

     

    35gr Flour

     

    20gr Old-Fashioned Oatmeal

     

     

     

    Filling:

     

    13gr Flour

     

    40gr Sugar

     

    5gr Cinnamon

     

    2.5 Apples
    ( medium-size )

     

    Pinch of Salt

     

     

     

    Optional Filling:

     

    40gr Apricot Preserves

     

     

     

    Egg wash:

     

    1 Egg
    ( yolk - beaten with 15ml Water )

     

    Confectioners' Sugar for Dusting




  • Imperial:

     

     

     

    Crust:

     

    4.4oz Flour

     

    1.7oz Butter

     

    1.7oz Solid Vegetable Shortening

     

    0.7oz Sugar

     

    0.1oz Salt

     

    Ice Water
    ( very cold water )

     

     

     

    Crunch Topping:

     

    1.7oz Brown Sugar

     

    1.2oz Butter
    ( melted )

     

    1.2oz Flour

     

    0.7oz Old-Fashioned Oatmeal

     

     

     

    Filling:

     

    0.4oz Flour

     

    1.4oz Sugar

     

    0.17oz Cinnamon

     

    2.5 Apples
    ( medium-size )

     

    Pinch of Salt

     

     

     

    Optional Filling:

     

    1.4oz Apricot Preserves

     

     

     

    Egg wash:

     

    1 Egg
    ( yolk - beaten with 0.5oz Water )

     

    Confectioners' Sugar for Dusting




  • Cups:

     

     

     

    Crust:

     

    1 cups Flour

     

    3 tablespoons Butter

     

    3 tbsp Solid Vegetable Shortening

     

    0.8 tablespoon Sugar

     

    0.4 teaspoon Salt

     

    Ice Water
    ( very cold water )

     

     

     

    Crunch Topping:

     

    0.25 cup Brown Sugar

     

    2 tablespoons Butter
    ( melted )

     

    0.25 cup Flour

     

    0.20 cup Old-Fashioned Oatmeal

     

     

     

    Filling:

     

    1 tablespoon Flour

     

    0.20 cup Sugar

     

    1 teaspoon Cinnamon

     

    2 Apples
    ( medium-size )

     

    Pinch of Salt

     

     

     

    Optional Filling:

     

    0.25 cups Apricot Preserves

     

     

     

    Egg wash:

     

    1 Egg ( yolk - beaten with 1 tablespoons Water )

     

    Confectioners' Sugar for Dusting




 

 

 

Directions:


 

To Make The Crust:

 

- In a food processor, combine Flour, Salt, and Sugar.

 

- Pulse in the Butter until the mixture looks like cornmeal.

 

- Add some Water, until the Dough starts to come together.

 

- Flatten into a disk.

 

- Place on a large plate and wrap loosly with some cling film, and refrigerate for about 30 minutes.

 

 

 

To Make The Crunch Topping:

 

- In a bowl, combine all the topping ingredients.

 

- Work the mixture together with your fingers to create a crumbly texture.

 

- Set aside.

 

 

 

To Make The Apple Filling:

 

- Peel, quarter, and thinly slice Apples.

 

- In a large bowl, combine the Flour, Sugar, Cinnamon, and Salt.

 

- Add the Apples and gently toss to coat them with the mixture.

 

 

 

01 - Preheat oven to 190C / 370F.

 

02 - On a lightly floured piece of parchment, roll the Dough into a 24cm / 10in circle circle.

 

03 - Spread the Apricot Preserves ( if you have decided to use them ) over the center, leaving a 6cm / 2.3in border.

 

04 - Place 3/4 of the crunch topping over, still leaving the border.

 

05 - Lay the Apple slices in concentric circles, adding layers until all the Apples are used.

 

06 - Sprinkle with remaining topping.

 

07 - Gently fold the Dough border up and around the edges of the filling.

 

08 - Carefully slide the paper with the Crostata onto a baking sheet.

 

09 - Brush the top of the Dough with the Egg wash.

 

10 - Bake for 40 minutes.

 

11 - At this point, if the Dough gets too brown on top, cover it with some kitchen foil to prevent it from burning, and bake an additional 10~15 minutes.

 

12 - Transfer the Crostata ( with the paper ) to a wire rack to cool.

 

13 - Dust with Confectioners' Sugar. Serve.





Notes:


 

- You can serve the Cake with a dollop of Whipped Cream or a Scoop of Ice Cream, on top or on the side.
