TRADITIONAL ITALIAN RECIPE: What's the best time of the year for vegetables? Well, let me be clear... ALL THE TIMES!!!
Meat is cancerogenic! It means it causes cancer! So... veggies is the answer! Unless you drink and smoke like an idiot... then... feel free to do whatever you want... the Darwin Awards will be at your doorstep soon anyway!

 

Regular Pesto is not quite versatile. It has a strong flavour, so when you wanna twist it you really have to change the main ingredient.

 

Italian pesto is one of the most “express” sauces in the world. It only takes two minutes to make it, and in a blink you have a quick, refreshing and colorful pasta sauce.

 

This rocket pesto sauce almost as much as the traditional basil pesto recipe take seconds to make. The method is pretty much the same, although rocket is used in place of basil.

Ingredients:

  • Metric:

     

     

     

    400gr Spaghetti Pasta

     

    150ml Olive Oil

    ( plus extra for storing )

     

    100gr Rocket

     

    70gr Parmesan Cheese

    ( or vegetarian alternative )

     

    50gr Pine Nuts

     

    30gr Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




  • Imperial:

     

     

     

    1lb Spaghetti Pasta

     

    5.2oz Olive Oil

    ( plus extra for storing )

     

    3.5oz Rocket

     

    2.4oz Parmesan Cheese

    ( or vegetarian alternative )

     

    1.7oz Pine Nuts

     

    1oz Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




  • Cups:

     

     

     

    5 handfuls Spaghetti Pasta

     

    1.5 cups Olive Oil

    ( plus extra for storing )

     

    1 bunch Rocket

     

    0.7 cup Parmesan Cheese

    ( or vegetarian alternative )

     

    2 tablespoons Pine Nuts

     

    0.3 cup Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




 

 

 

Directions:


 

01 - Boil a pot of salted water for the Pasta.

 

02 - In the meantime work on the Pesto. Start washing the Rocket.

 

03 - Put Rocket and all the other ingredients ( with exeption of the Pasta ) into a food processor and mix until smooth.

 

04 - When the water starts boiling add the Pasta.

 

05 - Add some boiled water to the Rocket Pesto Sauce inside the mixed to make it creamy, and mix again.

 

06 - Once the Pasta is al dente, drain and mix with the Sauce over low heat for 1 minute.

 

07 - Decorate each plate with some fresh Rocket leave. Sprinkle with extra Cheese and Oil. Serve.

 

 

 

Notes:

 

- Boiled Potatoes can be added to the recipe.
