Rocket Pesto Spaghetti with Toasted Almonds

TRADITIONAL ITALIAN RECIPE: To make Rocket Pesto even better, you only need to change one ingredient: toasted almond flakes (crumbled almonds are ok too!). END!

 

Making your own pesto is impressively easy: just put all the ingredients in a food processor and blend until smooth. To add extra crunchiness, I leave aside a few almonds flakes, and add them directly when mixing pasta & pesto together, it gives a fantastic sweet and nutty note.

 

The final "Cheffy" touch?

A little lemon zest freshly grated on top of your pasta with pesto sauce.

 

Although you can use your favorite pasta shapes, I always pair rocket pesto with either Spaghetti or Fusilli Pasta. Spaghetti is quite olways used for pesto in Italy, but fusilli, with their shape, have the ability to grab the sauce and never let it go.

 

Pesto brings back all my child memories, when my mum used to make all different type of pesto. Everywhere at home would smell delicious, and me and my sisters would have at least 2 pasta refills, because it was so addictively tasty, you couldn’t stop eating it.

    400gr Spaghetti Pasta

     

    150ml Olive Oil

    ( plus extra for storing )

     

    100gr Rocket

     

    70gr Parmesan Cheese

    ( or vegetarian alternative )

     

    50gr Toasted Almonds

     

    30gr Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




  • Imperial:

     

     

     

    1lb Spaghetti Pasta

     

    5.2oz Olive Oil

    ( plus extra for storing )

     

    3.5oz Rocket

     

    2.4oz Parmesan Cheese

    ( or vegetarian alternative )

     

    1.7oz Toasted Almonds

     

    1oz Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




  • Cups:

     

     

     

    5 handfuls Spaghetti Pasta

     

    1.5 cups Olive Oil

    ( plus extra for storing )

     

    1 bunch Rocket

     

    0.7 cup Parmesan Cheese

    ( or vegetarian alternative )

     

    2 tablespoons Toasted Almonds

     

    0.3 cup Pecorino Cheese

     

    2 Garlic Cloves

     

    Salt




 

 

 

Directions:


 

01 - Boil a pot of salted water for the Pasta.

 

02 - In the meantime work on the Pesto. Start washing the Rocket.

 

03 - In a dry frying pan over medium heat, toast the Almonds, stirring frequently. Watch carefully so they do not burn.

 

04 - Put Rocket and all the other ingredients ( with exeption of the Pasta ) into a food processor and mix until smooth.

 

05 - When the water starts boiling add the Pasta.

 

06 - Add some boiled water to the Rocket Pesto Sauce inside the mixed to make it creamy, and mix again.

 

07 - Once the Pasta is al dente, drain and mix with the Sauce over low heat for 1 minute.

 

08 - Decorate each plate with some fresh Rocket leave. Sprinkle with extra Cheese and Oil. Serve.

 

 

 

Notes:

 

- Boiled Potatoes can be added to the recipe.
