TRADITIONAL ITALIAN RECIPE: Penne pasta with smoked salmon and vodka is and old Italian classic, very popular as a quick fix when you have friends around unexpectedly and you want to feed them... or they want to be fed and won't leave.
It’s a very simple dish, packed with flavour ( if you like smoked salmon of course ) and very easy to make. There are a few versions of the recipe; some people like the classic one with some halved cherry tomatoes into the sauce, at the very end, and others like to garnish the dish with different herbs.
I'm a minimalist and I enjoy the traditional version of the recipe, with tomatoes, and the only herb I use is parsley as a decoration right at the end. A little word of advice; this is a dish to be served quickly, when it is still piping hot, because the sauce has the tendency to dry quickly because of the cream.
You’ll have to manage baking the salmon, simmering the Vodka sauce, and cooking the pasta.
Read this recipe thoroughly before getting started so you understand the timing. Or, if you really just want to make life a lot easier, considering using store-bought Vodka sauce.

Cups:
5 handfuls Penne Pasta
0.75 cup Double Cream
0.5 cup Dried Vodka
10 Cherry Tomatoes
0.5 cup Salmon
( or Smoked Salmon )
1 Shallot
2 tablespoons Butter
2 tablespoons Scallion
1 tablespoon Tomato Paste
Directions:
01 - Cook the Penne Pasta into some salted water.
02 - Chop the Shallot and saute into the Butter.
03 - Chop the Salmon in small pieces and add it to the pan with the Shallot.
04 - Add the Vodka and cook it until it has evaporated.
05 - While the Vodk evaporates, chop the Cherry Tomatoes and one the Vodka has gone, cook it with the Salmon for few minutes.
06 - Add the Tomato Paste and the Cream and cook for 3 minutes.
07 - Sprinkle some Scallion and mix well.
08 - Drain the Pasta al dente and combine it with the Sauce. Serve.
