TRADITIONAL ITALIAN RECIPE: Every month, for the last 30 years at least, myself and the neighbors throw a little party. The party is one of those progressive-kinda-party... appetizers at one house, the main at another, dessert and coffee at another.
And this pasta comes out actually quite often. They love it. I love it. Everyone is happy.
This pasta dish couldn’t be easier and comes together as quickly as it takes to boil the pasta.
Which means "little work" for me!
It’s also delicious. Peas and ham are a classic pairing for a good reason. Add a little garlic if you wanna twist it a bit, some Parmesan, pepper, and lemon zest, toss with the pasta and you’re there!
If your arteries are clogged, then stay away from this recipe though.
If you are not familiar with this dish, well, it is very similar to a creamy Fettuccini Alfredo, but, with the addition of ham and peas.
You can use a package of frozen peas cheaply available almost anywhere. If you can find fresh peas, then use them. But, don't use canned peas, as they will quickly turn to mush. Not good! With the frozen ones you can defrost the frozen peas in a microwave oven, but be careful not to overcook them. It's quick enough to finish defrosting them in the frying pan as the cream simmers. I usually boil them 5-10 minutes in the pan as I don't like the microwave.

Cups:
5 handfuls of Short Pasta
1.1 cups Peas
( frozen )
0.5 cup Ham
0.4 cup Heavy Cream
0.5 cup Water
2 tablespoons Butter
2 tbls Extra Virgin Olive Oil
Salt and Pepper
( to taste )
Pinch of Nutmeg
Directions:
01 - In a large frying pan, combine Oil, Water and Peas, cover with a lid ( leaving a little space open for the vapour to escape ) and cook over a low heat.
02 - Once the water is nearly all evaporated, start cooking the Pasta into some salted boiling water.
03 - Now, add all the other ingredients to the Peas: Butter, Ham and Heavy Cream, Nutmet, Salt and Pepper and cook over a low flame for 3 - 5 minutes.
04 - Drain the Pasta al dente.
05 - Toss it in the pan with the sauce.
06 - Mix well. Serve.
Notes:
- You can cook the Ham in a separate pan. Saute the Ham with the Butter until it browns, then combine it with the other ingredients. In this case you will slightly burn the Butter, so the taste will be a little bit different.
