TRADITIONAL ITALIAN RECIPE: Although Italians fry a lot ( Fried Pizza is one of the worst thing I have ever eaten... but still super tasty ), a simple Mediterranean diet is seen as very ealthy. Large-scale studies come out on average once a year, as if the study is paid by the Italian Government, they always find that participants who followed a Mediterranean diet had a lower risk of heart attack and stroke by almost a third compared those who were advised to follow a low-fat diet. In fact the results are always so impressive, the study is cut short in the control group can adopt a Mediterranean diet.
Over the years all these studies have added a large and growing body of well-conducted research that has not only linked the Mediterranean diet to improved cardiovascular health, but also to reduction in risk of type 2 diabetes, Alzheimer’s disease, arthritis, and cancers of the breast, prostate and colon.
Yet, people in Italy still die of all these diseases.
My advice is... eat everything. More Vegetalbe than meat. Avoid junk food... and you won't need "A DIET".
And you know what the best part is? The week after you usually read about it, you find a similar article/study about Japanese diet, French or Chinese. Basically... follow my advice!
This recipe is a good example of Mediterranean Diet. A selection of plump and juicy Olives marinated and infused with extra Virgin Olive Oil, white Coriander Seeds, Lemon and some Seasoning.
I've used a combination of Greek Kalamata Olives and Sicilian Green Queen Olives for this recipe. But the marinade works well with any combination of Olives. The key is to let the olives marinate for at least 12 hours. They keep well in the fridge, covered, for up to a week — but for the best flavor always be sure to serve them at room temperature.

200gr Sicilian Green Queen Olives
200gr Kalamata Olives
1 Lemon
Extra Virgin Olive Oil
4gr Coriander Seeds
Sea Salt
Freshly Ground Black Pepper
Cups:
2 cups Sicilian Green Queen Olives
2 cups Kalamata Olives
1 Lemon
Extra Virgin Olive Oil
2 tablespoons Coriander Seeds
Sea Salt
Freshly Ground Black Pepper
Directions:
01 - Use a pestle and mortar to crush the Coriander Seeds, but don't let them get too fine.
02 - Peel off long thick strips of Lemon Zest and place in a bowl with the Olives.
03 - Squeeze the Lemon then top with 3 times as much Extra Virgin Olive Oil.
04 - Add Salt, Pepper and the crushed Coriander Seeds.
05 - Pour the dressing over the Olives and leave to marinate. The longer you leave them, the better they'll taste.
Notes:
- Queen Olives and Kalamata Olives are just 1 possible combination. Use whatever you find.
