TRADITIONAL ITALIAN RECIPE: This simple Ham and Cheese Omelette recipe is one of Italians's favorite ways to make omelette.
This omelette is never made for breakfast in italy, but rather for dinner or lunch.
You can cook this for about 2 people (1 egg per person) and it's quick and inexpensive. This italian omelette is light in texture yet full of flavour. It’s so simple to make and once you’ve perfected the recipe, you’ll want to make it over and over again.
Use dry mozarella cheese, not the wet one you find in the bag with all that milky water or you'll make a mess once the mozzarella starts melting. Also
try different meats such as prosciutto or mortadella (for a cold omelette) instead.

Directions:
01 - In a large bowl, beat together Eggs, Salt and Black Pepper.
02 - Pour the Oil in a frying pan on a medium heat. Turn the pan side to side, spreading the Oil evenly, and pour the Egg mixture.
03 - Turn down the heat, flip the Omelette over a few times, and when it's ready ( after about 5 minutes ) add Mozzarella Cheese and Ham.
04 - Fold the Omelette and wait till the Mozzarella Cheese starts melting. Serve hot.
Notes:
- Because the Omelette is mainly made with eggs, try to eat it all the very same day. If you can't then, give it to your dog or neighbours.
- Served with Bread, Salad, a portion of boiled Potato and Green Beans with Salt and Extra Virgin Olive Oil, it can become a very healthy meal.
