TRADITIONAL ITALIAN RECIPE: If you have already tried any of my recipes you must have understood i'm the KING of baking!
This is a great old-fashioned tea cake – and perfectly presentable as a dessert with a big serving of ice cream if you have planned to become fat fat! :)
There is no trick here. Just follow all my directions and you are good to go. When i cook i usually use Organic products, in this case a nice thick-skinned organic lemon instead of the waxed and sprayed everyday ones.
I could tell you i used to make this one for my grandmother... btu the truth is... i always bake for myself. I'm pretty selfish when it comes to cooking!
Then my kid comes around and wants half of whatever i'm cooking.
I’d be totally lying if I said this is a healthy cake, unfortunately there is no healthy cake, but it's easy to make and it's really really good if I say so myself.

Cups:
1 cup Butter
1 cup Sugar
1 cup All-Purpose Flour
1 cup Corn Starch
4 Eggs
2 Lemons
( Zest and Juice )
1 teaspoon Baking Soda
Directions:
01 - Preheat oven to 180C / 350F.
02 - Cream together Butter and half of the Sugar using a mixer fitted with the paddle.
03 - When light and fluffy, it’s safe to add the Eggs ( ONLY the yolks ).
04 - Now you can add the Lemons ( ONLY the Zest ).
05 - Add flour, Corn Starch and the Baking Soda.
06 - Now, mix the Egg Whites with the Sugar, till it foms.
07 - While you are still using the mixer add the Lemon Juice.
08 - Now, mix everything up.
09 - Place everything inside a 22-24cm / 8-9in cake pan with oven paper in.
10 - Bake for 60 minutes, until the Cake is golden brown.
11 - When the Cake is ready, remove it from the oven and let it cool for about 20 minutes. You can now spring a bit of Sugar on top or leave it as it is.
