TRADITIONAL ITALIAN RECIPE: Unless you are Nigella ( whos able to see Italian even in english muffin :D ), when you think of Italian cuisine, many foods come to mind: pasta, garlic, Parmesan cheese, balsamic vinegar, prosciutto, lemons, and olives . . . but few of you outside of Italy think of apples when we consider the foods from Italy!

 

Yet Italy is the top producer of apples in all of Europe and the 5th apple-producing country in the world!

 

Italian Apple Cake ( Torta di Mele ) will forever help you remember the importance of apples in Italy’s cuisine!

 

The heart of the Italy’s apple production is in Northern Italy, where i was born and grew up half my life before i started travelling around the world, the region where the higher elevation altitudes ( up to 3,000 feet above sea level ) and unique micro-climatic and soil conditions offer idylic natural conditions for the cultivation of fragrant, crunchy and uniquely colorful apples. For over 2,000 years, Italian farmers have cultivated apples that thrive in Italy’s elevated alpine valleys and foothills of the Alps where the weather is cold enough to grow delicious, high-quality apples, unlike Southern Italy where the weather is continually warm and perfect for growing lemons.

 

You might say... WHO CARES... and you are probably right... but i need to write something in order to enter into Google Search... otherwise I would have to write 20 times "Apple Cake Recipe" LOL So... SHUSH!!! :P

 

Unlike American apple cake, which seems to me more of a spice cake with an afterthought of apples tossed in, this cake is about the apples. They make up most of the filling, bound by a small quantity of batter. The baked cake has a tender crumb and apples in every bite.

 

There are variations of this homespun cake all over Italy. The main ingredients are few and simple: flour, sugar, eggs, milk, butter (or oil), baking powder and vanilla. And apples, sliced or diced.

 

There are lots of other lovely apple cakes and desserts floating around out there... forget them. Trust me! Especially Nigella's Italian Ketchup Apple Cake... AHAHAH.

    400gr Golden Apples

     

    250gr Flour

     

    250gr Mascarpone

     

    4 Medium Eggs

     

    150gr Sugar

     

    4gr Baking Powder

     

    Vanilla

     

    Salt

     

     

     

    Optional:

     

    Powdered Sugar




  • Imperial:

     

     

     

    0.8lb Golden Apples

     

    8.8oz Flour

     

    8.8ozMascarpone

     

    4 Medium Eggs

     

    5.2oz Sugar

     

    0.14oz Baking Powder

     

    Vanilla

     

    Salt

     

     

     

    Optional:

     

    Powdered Sugar




  • Cups:

     

     

     

    About 5 Golden Apples

     

    2 cups Flour

     

    1 cup Mascarpone

     

    4 Medium Eggs

     

    0.75 cup Sugar

     

    1 teaspoon Baking Powder

     

    Vanilla

     

    Salt

     

     

     

    Optional:

     

    Powdered Sugar




 

 

 

Directions:


 

01 - Pre-heat the oven to 180C / 350F degrees. With an electric mixer, cream the Eggs, Sugar and Salt together until light and fluffy, about 3 minutes.

 

02 - Mix the Mascarpone with a fork. When it's smooth mix together with the Eggs.

 

03 - Add the Flour, Baking Powder and Vanilla and mix everything for about 3 minutes.

 

04 - Peel and core the Apples; cut the Apples into thin slices or cubes and place them in a bowl.

 

05 - Butter and line a 24cm / 10in cake pan with baking parchment.

 

06 - Use a rubber spatula to gently stir in the Apple slices or cubes. Spoon the batter into the prepared cake pan; use a spatula to even the top.

 

07 - Bake for ABOUT 40 minutes or until a tester inserted into the center comes out clean.

 

08 - Cool the Cake in the pan for 10-15 minutes.

 

09 -Invert the Cake onto a wire rack, remove the paper, and invert again onto a serving plate.

 

10 - Allow the Cake to cool completely. Serve.





Notes:


 

- Feel free to dust the Cake with Powdered Sugar.
