TRADITIONAL ITALIAN RECIPE: Literally "cheese and pepper", this minimalist cacio e pepe recipe is a cheap cheap version of the more famous ( yet as famous as lasagne in italy ) Mac and Cheese.
This si probably the best summer side dish for grilled meats. A simple pasta recipe of cheese and cracked black pepper is one of Italy best favorites. If you've ever been to Rome, you will see this dish on practically every menu. WHY? Because it is cheap to produce... people love it, and restaurants can make a huge amount of profit out of it. 400gr Spaghetti

Spaghetti for four people
1.5 cups Pecorino Romano Cheese
Black Pepper
Pinch of Salt
Optional:
Extra Virgin Olive Oil
Directions:
01 - Cook Spaghetti into salted water.
02 - Grate the Cheese and put into a pan.
03 - Take a ladle of the cooking water, the same water you are cooking the Spaghetti with, and pour it in a bowl or in a pan. Mix well to create a creamy and smooth sauce.
04 - Taste with Black Pepper.
05 - Save one or two ladles of cooking water to adjust.
06 - Drain Pasta al dente.
07 - Combine everything together into the pan and stir carefully until you obtain a creamy sauce.
08 - Sprinkle some extra Black Pepper. Served immediately.

Notes:
- Some people use half qantity of Pecorino Romano Cheese and half of Parmesan Cheese. This alternative option is as common as the traditional version shown above.
