Bavette with Pesto Potatoes and Green Beans

TRADITIONAL ITALIAN RECIPE: Basil has become the plant for every season, so I cut a couple of bunches from the garden and decided to make pesto.

 

I dug out the official recipe from Consorzio Pesto Genovese and added to it Pasta, Beans and Potatoes. The traditional Ligurian Recipe is very specific about exactly where the ingredients should come from. Basil must be fresh (unseasoned) grown in Liguria, renowned for its small and highly fragrant leaves, extra virginThe process must be delicate, to protect and enhance the sensory characteristics of all of the ingredients, in particular the Basil, which is very sensitive to heat during the production process of Pesto. The basil must be processed fresh so that the aroma and taste retain their natural intensity. Packaged in glass jars is simply excellent with pasta, Bavette with Pesto alla Genovese is one of the most famous recipes in Italy. olive oil, pine nuts, grated pecorino and parmesan cheese and garlic: only fresh ingredients, free from preservatives and colorants.

 

 

Here, you'll find the TRADITIONAL recipe, but feel free to substitute ingredients from another region. eg. Basil not from Genoa.

 

You should use a pestle and mortar... but trust me... that's a huge pain in the... arm! ;)

But that's undoubtably the best way, but you can get very acceptable results using a blender. Just put all the ingredients in a blender and blitz until almost smooth.

    400gr Bavette Pasta

     

    100gr Green Beans

     

    2 Medium Potatoes

     

    80gr Green Pesto

    ( Full Recipe Here )

     

    15gr Extra Virgin Olive Oil




  • Imperial:

     

     

     

    0.8lb Bavette Pasta

     

    3.5oz Green Beans

     

    2 Medium Potatoes

     

    2.8oz Green Pesto

    ( Full Recipe Here )

     

    0.5oz Extra Virgin Olive Oil




  • Cups:

     

     

     

    5 handfuls Bavette Pasta

     

    1 cup Green Beans

     

    2 Medium Potatoes

     

    3 tablespoons Green Pesto

    ( Full Recipe Here )

     

    1 tablespoon Extra Virgin Olive Oil




 

 

 

Directions:


 

01 - Wash the Green Beans. Boil them until they are tender, approximately 10 minutes.

 

02 - Trim the ends ( you can also trim the ends before biling them ).

 

03 - Peel and cuts the Potatoes in small chunks.

 

04 - Put the Potatoes into a bowl filled with cold water and turn the fire on.

 

05 - When the water starts boiling add the Pasta, in this way Pasta and Potatoes will be ready together.

 

06 - In a bowl, mix together Pesto, Olive Oil and Green Beans.

 

07 - You can add some boiled water to make it creamy.

 

09 - Add Bavette and Potatoes and serve hot.





Notes:


 

- Potatoes can be boiled separately.
