The simplicity of this recipe belies its depth of flavor, making it the perfect meal for any time of the day. Whether you're looking for a light lunch, a comforting dinner, or a quick and easy snack, this recipe is sure to hit the spot.
BLENDING:
To make this recipe, simply boil fresh tomatoes, onion, garlic cloves (or Cloves), and chicken broth until the flavors blend together. Then, run the mixture through a food mill to remove any chunks or skins. If you don't have a food mill, a food processor or immersion blender will work too.
THE ROUX:
Once the tomato mixture is smooth, it's time to make a roux using melted butter and flour in the original stockpot. Gradually add the tomato mixture to the stockpot, whisking continuously to avoid lumps forming. Finally, season with salt and sugar to taste.
EXTRA:
To enhance the flavor of the soup, fresh garlic and basil can be added as well. This not only adds depth to the flavor, but also provides a healthy dose of vitamins and antioxidants.
NEVER STOP TO CROUTONS:
While tomato soup is often paired with Pasta or Croutons, a classic Grilled Cheese Sandwich is too often used, there are many other options to consider. For example, you can try serving it with a BLT, Avocado Shrimp Ceviche, Chicken Pesto Paninis, or a Lazy Chicken Parmesan Grilled Cheese. The possibilities are endless!

01 - Begin by slicing or chopping the Onions into small pieces.
02 - Proceed to chop the Tomatoes into small, bite-sized pieces.
03 - In a pot over medium heat, combine the chopped Tomatoes, sliced Onion, Cloves, and Chicken Broth. Bring the mixture to a gentle boil and allow it to simmer for about 20 minutes to infuse the flavors.
04 -
Once done, remove the pot from the heat and transfer the mixture into a food mill to strain the mixture.
05 - Discard any seeds, skin, or debris that remains (check Notes).
06 - Next, melt the Butter over medium heat in the same pot used previously to boil the Tomatoes (step 03).
07 - Gradually and slowly, sift in the Flour to make a Roux and cook until the Roux turns brownish.
08 - Slowly pour the now strained and smooth Tomato mixture back into the pot, making sure to avoid any lumps.
09 - Allow the Soup to simmer for a few minutes, stirring occasionally.
10 - Taste the soup and season with Salt (and Sugar if desired) to your preference.
11 - Add some Extra Virgin Olive Oil and serve the soup hot and enjoy your delicious homemade Tomato Soup!
- If you don't have a food mill, you can remove the Tomatoes' seeds with a knife, chop them and puree everything using a hand mixer.
- This recipe is also incredibly versatile when it comes to storage. Tomato soup can be stored in an airtight container in the refrigerator for up to 3 days once completely cooled.
- Leftover tomato soup can be frozen in individual portions in zip-top bags or airtight containers for up to 3 months. This makes it the perfect meal for busy weeknights or meal prep sessions.
