Directions:



01 - Begin by preparing the vegetables for the Panera Broccoli Cheddar Soup Recipe. Cut the Broccoli into small florets and set aside.

02 - Cut the Carrots lengthwise into thin slices and set aside.



03 - Chop the Onion into small pieces.

04 - Melt 14g / 0.49oz / 1 tablespoon of Butter in a skillet over medium-high heat.

05 - Add the chopped Onion and cook for about 5 minutes or until it becomes tender and translucent. Then, set aside.



06 - Using another saucepan, larger and deeper this time, whisk 56g / 1.97oz / 0.25 cup Melted Butter and Flour together over medium-low heat.

07 - Gradually add the Milk to the Butter/Flour mixture while whisking continuously.

08 - Once the mixture is fully combined, add the Chicken Stock and bring to a simmer. This process should take approximately 20 minutes, and the mixture should thicken by then.

09 - Add the Broccoli florets, Carrot Slices, Celery, and sautéed Onions to the saucepan. Allow the vegetables to simmer for about 15 minutes or until they become tender.

10 - Add the shredded Cheddar Cheese to the mixture and stir until it is fully melted and combined with the other ingredients.

11 - Finally, season the Soup with Salt and Black Pepper to taste. Serve hot and enjoy!
