3 cups Chicken Broth
8 cups Broccoli Florets
1 Onion
( chopped )
5 tablespoons Butter

1 Stalk Celery

01 - Begin by gathering all the necessary ingredients and chopping the Onion and Celery. You can place them in the same bowl and set aside.
02 - Chop the Broccoli into Florets, place them into a large bowl and set aside.
03 - Heat the Butter in a medium-large pot over medium heat until melted.
04 - Add the chopped Onion and Celery to the pot and sauté until they become tender.
05 - Add the Broccoli, Black Pepper and Chicken Broth to the pot, then cover and let the mixture simmer for about 10 minutes.
06 - Pour everything into a blender to puree the soup until smooth, being careful not to fill the pitcher more than halfway. Blend in batches, much easier, until you reach your desired consistency.
07 - You can serve this with Pasta, Croutons or Bread.
- Butter adds rich flavor to sautéed vegetables like Onions and Celery.
- Chicken broth serves as the base liquid for the cream of broccoli soup, while vegetable broth can be substituted for a vegetarian option.
- Choosing dark green broccoli with firm stems is important for the recipe's success.
- Ground Black Pepper is best but other spices and seasonings can be used... totally up to you.
- The soup can be stored in the refrigerator for up to 3-4 days, and in the freezer for up to 2-3 months.
- If you want a more hearty texture, not pureeing all of the cooked broccoli.
- Lovers of Italian cousine drizzle the Soup with Olive Oil and grated Parmesan Cheese for added flavor.
