Japanese Tsukimi Gyudon ( 月見牛丼 ) Recipe

TRADITIONAL JAPANESE RECIPE: Gyudon(牛丼)is a popular dish which was made even more popular by chains like Yoshinoya, Tsukiya and Matsuya, which make delicious Gyudon for very reasonable prices in Japan. Gyu牛 means beef and don丼 means rice bowl (with something on top). In other words, Beef Rice Bowl. Basic gyudon may be topped with beni-shoga (pickled ginger), sliced negi (shallots/spring onion) and is also delicious as Tsukimi Gyudon(月見牛丼)(with a raw egg on top) if you're feeling adventurous.

    600ml Boiling Water

     

    400gr Steamed Rice
    ( to serve )

     

    300gr Beef
    ( very thinly sliced )

     

    200ml Soy Sauce
    ( Japanese Say Sauce )

     

    80gr Grated Fresh Ginger

     

    1 Small Onion

     

    4 Eggs

     

    40gr Leek
    ( read the Notes )

     

     

     

    Optional:

     

    40gr Sugar
    ( for caramelised Onion )

     

    30gr Dashi Powder

     

    Sake




  • Imperial:

     

     

     

    1.3lb Boiling Water

     

    0.8lb Steamed Rice
    ( to serve )

     

    10.5oz Beef
    ( very thinly sliced )

     

    7oz Soy Sauce
    ( Japanese Say Sauce )

     

    2.8oz Grated Fresh Ginger

     

    1 Small Onion

     

    4 Eggs

     

    1.4oz Leek
    ( read the Notes )

     

     

     

    Optional:

     

    1.4oz Sugar
    ( for caramelised Onion )

     

    1oz Dashi Powder

     

    Sake




  • Cups:

     

     

     

    2 cups Boiling Water

     

    2 cups Steamed Rice
    ( to serve )

     

    2 cups Beef
    ( very thinly sliced )

     

    0.6 cup Soy Sauce
    ( Japanese Say Sauce )

     

    4 tbsp Grated Fresh Ginger

     

    1 Small Onion

     

    4 Eggs

     

    2 tablespoons Leek
    ( read the Notes )

     

     

     

    Optional:

     

    2 tablespoons Sugar
    ( for caramelised Onion )

     

    2 tablespoons Dashi Powder

     

    Sake




 

 

 

Directions:


 

01 - Place Water, Dashi Powder and Onions in a saucepan and boil for 3 minutes.

 

02 - Add Sugar*, Sake*, Soy Sauce, Beef, and stir to combine well. Slightly boil and simmer for 10 minutes.

 

03 - In bowl, put the Rice and top with the Beef mixture.

 

04 - Crack a fresh Egg on top. Serve.





Notes:


 

- Ginger can be placed on top and Nori on the side.

 

- Leek should be placed on top, fresh. No cooking required.

 

- About the Meat, the cooking time is probably the most important thing. If it is undercooked, the flavour will not stick to the Meat and the Onions might result too sharp. If it is overcooked, the Onions will become too soft and the flavour too strong.
