TRADITIONAL JAPANESE RECIPE: Salted Chocolate Truffles with Koji Salt have always impressed people. There is something with these Truffles that seems to attract people more than regular Truffles. The main thing that attract the people that cook these Truffles, it's also the amount of ingredients... very few.
These Truffles are super delicious. The combination between sweet and salt let this recipe shine above all the others.
WHAT'S KOJI SALT?
Koji Salt is a sort of paste/joice made of rice koji, salt, and rice. Shio koji is one of those things that have been used forever in Japan for hundreds or thousands of years.
Koji Salt is a very versatile ingredients. It is used for meat, fish, sauces, dressings, pickles and much more.

150g Milk Chocolate
60ml Fresh Cream
20g Cocoa Powder
20g Koji Salt
Hot water
(for water bath, 50C )

1 large bar of Milk Chocolate
0.25 cup Fresh Cream
3 tablespoons Cocoa Powder
1 tablespoon Koji Salt
Hot water
(for water bath, 50C / 122F)
Directions:
01 - Place a parchment paper on a small tray.
02 - Brake the Milk Chocolate bar in small pieces.
03 - Put the pieces of Chocolate into a bowl in a water bath. Be very careful not tu burn the chocolate.
04 - When the Milk Chocolate has melted, add the fresh Cream and the Koji Salt and mix with a rubber spatula until smooth and clear.
05 - Pour the Mixture into the tray prepared in STEP 01, flatten it, cover it with some cling film, and chill in the refrigerator for about 30 minutes.
06 - Once the chocolate has slightly hardened, cut it into 8 equal parts, wrap in plastic wrap, roll to form a ball and chill again in the refrigerator for 30 minutes to harden.
07 - Once the chocolate balls have hardened, using another tray, coat with Cocoa Powder. Serve.
Notes:
- The flavor and strength of Koji Salt varies depending on the type, so use the amount as a guide, then change to your liking.
