TRADITIONAL JAPANESE RECIPE: Tamago is the Japanese omelet commonly used in maki, nigiri and Temaki sushi. Unlike a regular omelet, the tamago is made with sugar, soy sauce, and mirin added. Furthermore, it is fried by a very unique method, as explained in the following guide.
This tamago sushi recipe is very easy to make, and easy to enjoy. It is highly recommended for vegetarian sushi fans, pregnant women and anyone with a sense of taste.

4 tbsp Dashi Stock Powder
1 tablespoon Mirin
1 tablespoon Sugar

Directions:
01 - Beat the eggs VERY well, being sure to get them as smooth as possible.
02 - Pour about 1/4 of the mixture into a well-oiled tamago pan and spread as if you are making a crepe.
03 - As the mixture cooks, bubbles and sets, roll it and move it to the back of the pan.
04 - Add more oil to the pan and some more of the mixture, making sure to get some under the roll.
05 - As it cooks, roll the old roll back to the front of the pan, then again to the back.
06 - Repeat until you are out of mixture.
07 - Remove roll from the pan and roll as you would a sushi roll, squeezinng out excess liquid.
08 - You can roll it into either a round or rectangular shape and slice it when it has cooled ( Serving: check notes down below ).
Notes:
- Can be served as is, or as nigiri, atop a mound of rice wrapped in a thin sheet of nori.

This was delicious. Mine looked horrible compared to the ones in the picture but still very tasty. I'll probably never be able to roll the tamago the right way tight enough the japanese way.
