Japanese Sweet and Sour Pork ( 酢豚 ) Recipe

TRADITIONAL JAPANESE RECIPE: Sweet and sour chicken is a dish frequently served in Chinese restaurants in various Western countries. It is common in Australia, Europe, North America and South America, and is available at some restaurants in East and Southeast Asia in an essentially identical version. The dish generally comprises cubes of white meat chicken deep-fried in batter and served with sweet and sour sauce. Sometimes it is topped with pineapple, green pepper, carrot, or sweet pickles.

    600gr Pork
    ( cut into bite-pieces )

     

    2 Large Onions
    ( sliced )

     

    2 Carrots
    ( sliced )

     

    2 Large Green Bell Peppers
    ( sliced )

     

    Cornstarch
    ( as much as you need )

     

     

     

    Sauce

     

    400ml Water

     

    120gr Sugar

     

    90ml Vinegar

     

    80gr Ketchup

     

    50gr Cornstarch
    ( mixed with a little water )

     

    30ml Soy Sauce

     

    20gr Chicken Stock Powder




  • Imperial:

     

     

     

    1.3lb Pork
    ( cut into bite-pieces )

     

    2 Large Onions
    ( sliced )

     

    2 Carrots
    ( sliced )

     

    2 Large Green Bell Peppers
    ( sliced )

     

    Cornstarch
    ( as much as you need )

     

     

     

    Sauce

     

    0.8lb Water

     

    4.2oz Sugar

     

    3oz Vinegar

     

    2.8oz Ketchup

     

    1.7oz Cornstarch
    ( mixed with a little water )

     

    1oz Soy Sauce

     

    0.7oz Chicken Stock Powder




  • Cups:

     

     

     

    4 cups Pork
    ( cut into bite-pieces )

     

    2 Large Onions
    ( sliced )

     

    2 Carrots
    ( sliced )

     

    2 Large Green Bell Peppers
    ( sliced )

     

    Cornstarch
    ( as much as you need )

     

     

     

    Sauce

     

    1.4 cups Water

     

    8 tablespoons Sugar

     

    6 tablespoons Vinegar

     

    4 tablespoons Ketchup

     

    6 tablespoons Cornstarch
    ( mixed with a little water )

     

    2 tablespoons Soy Sauce

     

    4 tsp Chicken Stock Powder




 

 

 

Directions:


 

01 - Place all Sauce ingredients in a bowl and stir till everything is well mixed. Cover with some cling film and move to the next step.

 

02 - Place the Cornstarch with a little Salt and Pepper in a new bowl and coat the Pork well.

 

03 - Shallow-fry with Oil until browned and crisp.

 

04 - Dry the Pork with some kitchen paper.

 

05 - In a wok or large frypan, heat a some Oil and stir-fry the vegetables.

 

06 - Give the cup of Sweet and Sour Sauce a final stir, then add it to the vegetables, continue stirring over medium heat until the Sauce thickens.

 

07 - Add the Pork and stir to combine.





Notes:


 

- Serve with Rice ( dry Japanese Rice )
