TRADITIONAL JAPANESE RECIPE: The majority of recipe requests that I receive from readers are vegetable dish. Was that surprising to you? To me it was…since I’m used to seeing my 5 and 3 year olds refusing to eat green vegetables such as spinach.
In general, traditional Japanese cuisine is known for being healthy and low in fat. Typical Japanese meal consists of steamed rice, miso soup (every day different ingredients), main dish, and side dishes. These side dishes are usually served individually in kobachi (literally meaning small bowl), just like this dish in above picture.

0.8lb Spinach
1.7oz Dashi

0.5oz Soy Sauce
0.1oz Sugar
Katsuobushi
( Dried Bonito Flakes )
Cups:
1 Bunch of Spinach
0.25 cup Dashi
( Recipe Here )
1 tablespoon Soy Sauce
0.5 teaspoon Sugar
Katsuobushi
( Dried Bonito Flakes )
Directions:
01 - In a small bowl, mix Dashi ( Recipe Here ), Soy Sauce and Sugar.
02 - Boil some water in a large pot, and add the Bunch of Spinach and cook it for about 30 seconds.
03 - Remove the pot from the heat drain.
04 - Cool the Spinach under running water, and once cooled, squeeze all the water out.
05 - Cut the Spinach into 5cm / 2in pieces.
06 - Combine the Spinach with the Dashi Sauce mixture and mix well.
07 - Chill or serve right away.
08 - Sprinkle Katsuobuhi on top before serving.
