Goma-ae is a spinach and sesame seed dish that can be either a side dish or an accompaniment to a main dish. This dish is extremely easy to make and can be eaten cold by itself. as part of a bento lunch, or hot with a little steamed rice.

450gr Spinach
30gr Toasted Sesame
Seeds
20gr Soy Sauce
15gr Dashi
3gr Sugar
1gr Salt
Cups:
1 Regular Bunch of Spinach
0.33 cup Toasted Sesame Seeds
1 teaspoon Soy Sauce
1 tablespoon Dashi
0.5 teaspoon Sugar
0.2 teaspoon Salt
Directions:
01 - Boil the Spinach in boiling water for 2 minutes.
02 - Drain the Spinach, rinse them and place them in water with ice to cool them fast.
03 - Squeeze out as much water as you can out of the Spinach and cut everything into 5cm / 2in long pieces.
04 - In a medium bowl, whisk the Dashi, Soy Sauce and Sugar together.
05 - Add the Spinach into the Dashi mix and toss well untill everything is well mixed.
06 - Process ( or blend ) the toasted Sesame Seeds and Salt until it start to look like wet sand.
07 - Mix Spinach and Sesame Seeds. Serve.
