TRADITIONAL JAPANESE RECIPE: Shira-ae is a vegetable side dish mixed with mashed Tofu. It is a little different from regular salad since there is no dressing like oil and vinegar. Shira-ae is served chilled, so in a sense it’s like salad. Shira-ae is hard to get in ordinary Japanese restaurants in the US, but this is a kind of food we grow up with.

3.5oz Tofu
1 small bunch Spinach
8.8oz Dashi

Cups:
1 package Tofu
1 small bunch Spinach
1 cup Dashi

1 tablespoon Mirin
1 tablespoon Soy Sauce

Directions:
01 - Slice Tofu into 6-8 pieces.
02 - Place the Tofu pieces on paper towels over a plate and microwave for 2 minutes.
03 - Change to new paper towels and microwave for 2 more minutes.
04 - Change to new paper towels again and let Tofu cool.
05 - In a pot, cook the Spinach for a minute.
06 - Wash under cold water and squeeze well.
07 - Cut the Spinach into 2.5cm / 1in long bits.
08 - In a medium pot, heat the Dashi ( Recipe Here ) and boil in Carrot and Konnyaku ( Recipe Here ) for about 2-3 minutes.
09 - Add Mirin and Soy Sauce and cook until the Sauce has nearly all evaporated.
10 - Let it cool, then add the Spinach and mix.
11 - Mash the Tofu and mix it with the Sesame Sauce ( Recipe Here ), then add the cooked Vegetables.
