Japanese Satsumaimo Amani ( さつまいもの甘煮 ) Recipe

TRADITIONAL JAPANESE RECIPE: Satsumaimo Amani is sweet potato cooked in sweet syrup. It is a great small side dish or snack. Satsumaimo Amani is not something you eat at restaurants, but it is often made at home in the fall.

Satsumaimo Amani doesn’t really go with Steamed Rice, but rather eaten to refresh the palate between salty dishes.

Ingredients:

    400gr Satsumaimo
    ( Japanese sweet potatoes )

    300gr Water

    45gr Sugar

    1.5gr Salt




  • Imperial:

     

     

     

    0.8lb Satsumaimo
    ( Japanese sweet potatoes )

    10.5oz Water

    1.5oz Sugar

    0.05oz Salt




  • Cups:

     

     

     

    2 Satsumaimo
    ( Japanese sweet potatoes )

    1.5 cup Water

    3 tablespoons Sugar

    0.25 teaspoon Salt




 

 

 

Directions:


 

01 - Cut the Satsumaimo into 2.5cm / 1in thick rounds.

02 - Soak the slices in water for 5 minutes.

03 - Put the Satsumaimo in a pot. Add water to cover the potatoes and boil for 1 or 2 minutes. Strain and set aside.

04 - Put 300gr / 10.5oz / 1.5 cup water, Sugar and Salt in a second pot and stir to mix.

05 - Put the Potatoes in the second pot and cook at medium heat until boil. Turn the heat down to low, cover and cook for an additional 20 minutes.

06 - Cool leaving potatoes in syrup. Serve.

 

 

 

Notes:


 

- Once the potatoes are cool you can also sprinkle some black sesame seeds.
