TRADITIONAL JAPANESE RECIPE: Salmon Flakes are very good as a side dish to make ahead. Although you can not really eat this as an entree, it is a very convenient and useful thing to have on hand. This seasoned, pan-dried and moisture-reduced salmon, almost like Furikake seasoning, is perfect to sprinkle on your steamed rice.

Ingredients:

  • Metric:

     

     

     

    400gr Rice

     

    250gr Salmon Fillet

     

    15ml Sake
    ( Rice Wine )

     

    7ml Mirin

     

    3gr Salt
    ( to taste )

     

    3gr Toasted Sesame Seeds




  • Imperial:

     

     

     

    14.1oz Rice

     

    8.8oz Salmon Fillet

     

    0.5oz Sake
    ( Rice Wine )

     

    0.2oz Mirin

     

    0.1oz Salt
    ( to taste )

     

    0.1oz Toasted Sesame Seeds




  • Cups:

     

     

     

    2 cups Rice

     

    1 Salmon Fillet

     

    1 tablespoon Sake
    ( Rice Wine )

     

    0.5 tablespoon Mirin

     

    0.66 teaspoon Salt
    ( to taste )

     

    0.5 teaspoon Toasted Sesame Seeds




 

 

 

Directions:


 

01 - Cook the rice.

 

02 - Preheat oven to 220C / 425F.

 

03 - Place the Salmon on a greased baking sheet and cook it in the oven for about 10 minutes.

 

04 - Unce it's ready, remove it from the oven and flake it with a fork, removing bones and skin.

 

05 - In a small pan over medium heat combine Salmon Flakes and Sake. Stirring constantly.

 

06 - Cook the Salmon until it is dry.

 

07 - Add Salt, Mirin, and Sesame, and continue frying for a few more minutes.

 

08 - Cool completely.

 

09 - Place on the Rice. Serve.





Notes:


 

- Salmon Flakes can also be used as Onigiri fillin.
