Japanese Plum Onigiri Rice Ball Recipe ( 小梅のおにぎり )

TRADITIONAL JAPANESE RECIPE: If you've never been in Japan, Rice Balls are triangle-shaped Rice Balls made of streamed white rice, wrapped in a sheet of dried Nori Seaweed.

Umeboshi (梅干し) is a savory Japanese pickled ume plum eaten as a condiment. There are two types of umeboshi, the regular, bigger wrinkly pickled plum called Umeboshi, and the smaller called Ko Ume (小梅). For this recipe you'll need Ko Ume.

    680gr Cooked Japanese Short-Grain Rice

    100gr Ko Ume Pickled Plums

    18gr Toasted White Sesame Seeds

    5gr Kosher Salt or Sea Salt
    ( half Table Salt )

    3 Sheets Nori Seaweed
    ( cut the Nori Sheets in thirds )




  • Imperial:

     

     

     

    1.5lb Cooked Japanese Short-Grain Rice

    3.52oz Ko Ume Pickled Plums

    0.63oz Toasted White Sesame Seeds

    0.17oz Kosher Salt or Sea Salt
    ( half Table Salt )

    3 Sheets Nori Seaweed
    ( cut the Nori Sheets in thirds )




  • Cups:

     

     

     

    2 ( uncooked ) cups Japanese Short-Grain Rice

    About 25 Ko Ume Pickled Plums

    2 tablespoon Toasted White Sesame Seeds

    1 teaspoon Kosher Salt or Sea Salt
    ( half Table Salt )

    3 Sheets Nori Seaweed
    ( cut the Nori Sheets in thirds )




 

 

 

Directions:


 

01 - Remove all the seeds from the Pickled Plums.

02 - Mince the Plums with a knife.

03 - Add the chopped Pickled Plums and Sesame Seeds to the Steamed Rice.

04 - Mix well.

05 - Roughly divide the Rice into 6 or 8 equal portions.

06 - Wet both hands and then dip 2 fingertips in the Salt and spread on your palms.

07 - Scoop one portion of Rice onto your palm and gently press and mold the Rice into a triangle. To make the classic triangle shape, use thumb, index and middle finger.

08 - Wrap the Rice Ball with Nori Seaweed. Serve.
