Japanese Nikumaki Onigiri Recipe (肉巻きおにぎり)

TRADITIONAL JAPANESE RECIPE: Nikumaki Onigiri is a rice ball beautifully wrapped with thinly sliced Beef in sweet Soy Sauce.

It's called Onigiri rather than involtini, because in the Japanese cusine Onigiri is White Rice wrapped in Roasted Seaweeds.

Nikumaki literally means 'wrapped in meat'. Nikumaki has appeared in Japan towards the end of the 1990's in the city of Miyazaki in Kyushu, the southern largest island of Japan. But today, you can find Nikumaki, or some sort of meat onigiri or maki, virtually everywhere.

Nikumaki is a great meal for everyone and it can be eaten at any time, on weekends or during the week.

    350gr Steamed Rice

    4 Extremely Thin Slices of Beef

    25gr Soy Sauce

    15gr Water

    14.5 Sake

    14.9 Mirin

    13.8gr Oil

    12.5gr Sugar

    2 pinches Salt

    Sesame Seeds




  • Imperial:

     

     

     

    12.34oz Steamed Rice

    4 Extremely Thin Slices of Beef

    0.88oz Soy Sauce

    0.52oz Water

    0.51oz / 1 tablespoons Sake

    0.52oz Mirin

    0.48oz Oil

    0.44oz Sugar

    2 pinches Salt

    Sesame Seeds




  • Cups:

     

     

     

    2 cups Steamed Rice

    4 Extremely Thin Slices of Beef

    1.5 tablespoons Soy Sauce

    1 tablespoons Water

    1 tablespoons Sake

    1 tablespoons Mirin

    1 teaspoon Oil

    1 teaspoon Sugar

    2 pinches Salt

    Sesame Seeds




 

 

 

Directions:


 

01 - In a small bowl, mix Sugar, Sake, Soy Sauce, Mirin and water. Set aside.

02 - Steam/Cook the Rice with a pinch of Salt.

03 - Make a cylindrical ball with about half cup of steamed Rice.

04 - Wrap each Rice Ball created with a slice of Beef.

05 - Heat the Oil in a frying pan and cook the Rice Balls now wrapped in Beef, until browned on all sides.

06 - Add the Sauce created in STEP 01 coating the Beef.

07 - Cook until all liquid is gone.

08 - Sprinkle Sesame Seeds. Serve.





Notes:


 

- If you decided to eat Nikumaki Onigiri by hands you can pair these delicious balls with some Lettuce Leaves.
