HISTORY:

The origin of Madeleines is shrouded in mystery, with several legends circulating about their 'invention'. These legends often involve a female cook named Madeleine who served an important figure in Lorraine's history, but there is no consensus on the surname of the cook or the identity of the famous figure. Some believe the Madeleines were created for Cardinal Paul de Gondi in the 17th century, while others credit Madeleine Paulmier, a cook for Stanislaus I, Duke of Lorraine and exiled King of Poland in the 18th century.

According to one story, Louis XV, son-in-law of the Duke, was so charmed by the Madeleines that he named them after Madeleine Paulmier, and his wife, Maria Leszczyńska, introduced them to the court in Versailles. The cakes soon became popular throughout France, especially among the royal family.

Another legend links the Madeleines to the pilgrimage to Compostela in Spain, where a pilgrim named Madeleine is said to have brought the recipe back, or a cook named Madeleine is said to have offered the shell-shaped cakes to passing pilgrims.

Yet other stories attribute the invention of the Madeleines to pastry chef Jean Avice, who worked for Prince Talleyrand and is said to have created the cakes in the 19th century using aspic moulds.

    133g 1 tablespoon Sugar

    113g Unsalted Butter
    ( plus 1 tablespoon to coat the Madeleines' pan)

    120g All-Purpose Flour

    2 Large Eggs
    ( 50g each - room temperature )

    15ml Whole Milk
    ( room temperature )

    6g Matcha
    ( Green Tea Powder )

    4g Baking Powder

    1.5g Kosher Salt



    Optional:

    8g Powdered Sugar
    ( for dusting )




  • Imperial:

     

     

     

    4.69oz Sugar

    3.98oz Unsalted Butter
    ( plus 1 tablespoon to coat the Madeleines' pan)

    4.23oz All-Purpose Flour

    2 Large Eggs
    ( 1.76oz each - room temperature )

    0.59oz Whole Milk
    ( room temperature )

    0.21oz Matcha
    ( Green Tea Powder )

    0.14oz Baking Powder

    0.05oz Kosher Salt



    Optional:

    0.28oz Powdered Sugar
    ( for dusting )




  • Cups:

     

     

     

    1 cup and 1 tablespoon Sugar

    0.5 cup Unsalted Butter
    ( plus 1 tablespoon to coat the Madeleines' pan)

    1 cup All-Purpose Flour

    2 Large Eggs
    ( 50g / 1.76oz each - room temperature )

    1 tablespoon Whole Milk
    ( room temperature )

    2 teaspoons Matcha
    ( Green Tea Powder )

    1 teaspoon Baking Powder

    0.25 teaspoon Kosher Salt



    Optional:

    1 tablespoon Powdered Sugar
    ( for dusting )




 

 

 

Directions:


 

01 - In a small pot, over medium heat, melt the Butter without burning it.

02 - Move the melted Butter into a small bowl and set aside for now.



03 - With a whisk, combine in a large bowl: Flour, Sugar, Salt, Baking Powder and Matcha. Set aside.



04 - Using a second bowl, whisk together the 2 Eggs and the Milk until frothy.

05 - Now, add in this order, and slowly: Flour mixture (prepared in STEP 03) and the melted Butter (prepared in STEP 02), and mix until the batter is well combined and smooth.

06 - Cover the bowl with some cling film and refrigerate overnight (or at least 4 hours).



07 - Whenever you're ready to bake, preheat the oven to 190C / 375F



08 - Melt 1 tablespoon of Butter and brush the Madeline's pan with the Butter.

09 - Using a strainer (sifter or duster) dust some Flour on the buttered pan.

10 - Now, remove the prepared Batter from the fridge, and fill each mold of the pan with approximately a tablepoon of Batter. You won't need to smooth, press or spread the Batter inside it's mold, the Batter will melt and gently spread to its place.

11 - Bake for qbout 12-15 minutes, or until the Madelines look done, usually when the edges are slightly darcker and the Madelines are firm to the touch. You can even use a toothpick to check the inside. Simply sprick the Madeline and if the toothpick comes out clean, it's ready.

12 - Let the Madelines cool for a few hours outside the oven.

13 - Use a fork to remove each Madeline, and transfer them onto a rack.

14 - Serve the Madelines hot, at room temperature or cooled. You can serve them plain or sprinkle some Powdered Sugar and Matcha on top.





Notes:


 

- If you don't bake it soon, put the batter in an airtight bag and store it in the freezer for up to 2 weeks.

- For a convection oven, reduce cooking temperature by 25ºF (15ºC).

HOW TO STORE: once cooked Madelines should be eaten fast, the dry quickly. You can place them in an airtight container (or bag) and store them in the fridge for no longer than 48 hours.
