Japanese Kitsune Udon Recipe ( きつねうどん )

TRADITIONAL JAPANESE RECIPE: Kitsune Udon is Udon noodles in hot Dashi soup topped with Aburaage that has been cooked in a sweet and salty sauce. Although you don’t often see Kitsune Udon in Japanese restaurants in the US, it is one of the most popular dishes and a staple menu item at Udon restaurants in Japan.

    4 Aburaage
    ( Deep-Fried Tofu - blanched and cut into halves )

     

    4 packages pre-boiled Udon Noodles

     

     

     

    For Simmering Aburaage:

     

    200ml Dashi Soup Stock

     

    30gr Sugar

     

    15ml Mirin

     

    15ml Soy Sauce

     

     

     

    For Soup:

     

    1L. Dashi Soup Stock

     

    45ml Mirin

     

    30ml Soy Sauce

     

     

     

    Optional:

     

    4 slices Kamaboko Fish Cake
    ( for topping )

     

    Salt

    ( adjust the amount of Salt to your preference )




  • Imperial:

     

     

     

    4 Aburaage
    ( Deep-Fried Tofu - blanched and cut into halves )

     

    4 packages pre-boiled Udon Noodles

     

     

     

    For Simmering Aburaage:

     

    7oz Dashi Soup Stock

     

    1oz Sugar

     

    0.5oz Mirin

     

    0.5oz Soy Sauce

     

     

     

    For Soup:

     

    2.2lb Dashi Soup Stock

     

    1.5oz Mirin

     

    1oz Soy Sauce

     

     

     

    Optional:

     

    4 slices Kamaboko Fish Cake
    ( for topping )

     

    Salt

    ( adjust the amount of Salt to your preference )




  • Cups:

     

     

     

    4 Aburaage
    ( Deep-Fried Tofu - blanched and cut into halves )

     

    4 packages pre-boiled Udon Noodles

     

     

     

    For Simmering Aburaage:

     

    3/4 cup Dashi Soup Stock

     

    2 tablespoons Sugar

     

    1 tablespoon Mirin

     

    1 tablespoon Soy Sauce

     

     

     

    For Soup:

     

    5 cup Dashi Soup Stock

     

    3 tbsp Mirin

     

    2 tbsp Soy Sauce

     

     

     

    Optional:

     

    4 slices Kamaboko Fish Cake
    ( for topping )

     

    Salt

    ( adjust the amount of Salt to your preference )




 

 

 

Directions:


 

01 - Heat Dashi, Mirin, Sugar, and Soy Sauce in a medium pan and bring to a boil.

 

02 - Simmer Aburaage in the Soup on low heat until the liquid is almost gone. Set aside.

 

 

 

03 - Boil Water in a large pan and heat Udon Noodles as indicated in the package.

 

04 - Drain the Udon and divide into four bowls.

 

 

 

05 - In the meantime, combine Dashi, Soy Sauce, and Mirin in a medium pan and bring to a boil.

 

06 - Adjust the flavor with Salt as you like.

 

 

 

07 - Pour the hot Soup over Udon Noodles.

 

08 - Top with seasoned Aburaage and Kamaboko slices.
