TRADITIONAL JAPANESE RECIPE: Kinoko Gohan is a kind of Takikomi Gohan, seasoned steamed rice with meat and vegetables but in this case in Japan we normally use Kinoko Gohan mushrooms.
The Umami savory taste and aroma from the mushrooms are absorbed into the rice while it cooks, which makes the dish so delicious.

2 cups Rice
1 package Shimeji Mushrooms
5 Shiitake Mushrooms
2 Green Onions
( chopped )
2 tablespoons Mirin
2 tablespoons Sake
2 tablespoons Soy Sauce
0.5 teaspoon Salt
Directions:
01 - Separate Shimeji Mushrooms into pieces.
02 - Slice Shiitake thinly.
03 - Wash the Rice well and put in the Rice cooker's removable bowl.
04 - Add Salt, Soy Sauce, Sake and Mirin and stir to combine.
05 - Add enough Water to reach the line for 2 cups of Rice.
06 - Add mushrooms.
07 - Cook according to the rice cooker instructions.
08 - After the Rice is done, mix in the chopped Green Onions.
Notes:
- In this Kinoko Gohan recipe we have used Shiitake and Shimeji Mushrooms, but you can also use different mushrooms. Enoki, Maitake and Eringi will work too.
- You can also add Chicken, Aburaage or thin fried Tofu.
