TRADITIONAL JAPANESE RECIPE: One of Japan's favorite ingredients is kabocha. What is kabocha? A Japanaese Pumpkin. For those of you that has never seen a Kabocha, well... it has a deep green skin and an intense yellow-orange color on the inside, it has a sweet flavor, sweeter than butternut.
The cool thing about kabocha is that you can pretty much use it like you cook potatoes. It can be softened in the microwave, mashed, fried, simmered, etc.
Typical kabocha salad includes kabocha, sliced cucumbers, and raisins but sometimes kabocha salad includes onion, too.

1 Cucumber
80gr Mayonnaise
10ml Lemon Juice

4 tablespoons Mayonnaise
2 teaspoons Lemon Juice
Half teaspoon Salt
Black Pepper
( Optional )
Directions:
01 - Peel and dice the Pumpkin untill soft.
02 - Slightly mash the Kabocha ( Japanese Pumpkin ). Leave some bits, you don't actually need to mash it all the way.
03 - Add the lemon juice and let it cool.
04 - Thinly Slice the cucumber and sprinkle salt on it.
05 - Let the cucumber sit for 5-10 minutes, and squeeze the water out.
06 - Mix the mash, cucumber, and mayonnaise untill everything is well combined. Serve.
