Japanese Curry is a comfort dish, made in all houses and restaurants across the country thanks to its simplicity and flavour. The convenience really comes from having a ready made Curry Sauce Mix, or Curry Roux ( カレールー ).
Although the ready to make Curry Roux will spare you some time, making it on your own is the ultimate treat. No MSG, no artificial flavours, no food additives and you can customize the flavour and thickness.

84gr Unsalted Butter
60gr All-Purpose Flour
( Plain Flour )
12gr Curry Powder
12gr Garam Masala
3gr Cayenne Pepper

Cups:
6 tablespoons Unsalted Butter
8 tabespoons All-Purpose Flour
( Plain Flour )
2 tablespoons Curry Powder
2 tablespoons Garam Masala
0.5 teaspoons Cayenne Pepper
( optional for spicy )
Directions:
01 - Melt the Butter in a small sacepan, over low heat.
02 - Once the Butter has melted, slowly add the Flour, stirring until well combined.
03 - Keep (very important) stirring for about 10-15 minutes over very low heat (do not burn).
04 - As soon as the Roux has turn to light brown color, add Garam Masala, Curry Powder, and Cayenne Pepper.
05 - Cook and stir for 30 seconds and remove from the heat.
Notes:
- When you use, add Salt based on the recipe you're adding it to.
- Butter: Richer sweet flavor,
- Flour: helps to thicken the mix.
- Adjust the amount of the spices until the flavor is to your liking.
- To Store: let it cool in an airtight container with lid or pour it into an ice cube mold (wrapped) and store in the freezer for 2 months.
