TRADITIONAL JAPANESE RECIPE: This is a spinach salad with a flavorful sesame sauce ( hourensou no goma-ae ) that is very similar to our Green Beans with Sesame Sauce, and is a great little side dish. It is super quick to make, but very nutritious and tasty.

400gr Spinach
36gr Roasted Sesame Seeds

30gr Soy Sauce
20gr Sugar

Cups:
2 bunches of Spinach
2 tablespoons Roasted Sesame Seeds
( ground )
2 tablespoon Soy Sauce
4 teaspoons Sugar
Extra Roasted Sesame Seeds
( for garnish )
Directions:
01 - Grind Sesame Seeds, and mix with Soy Sauce and Sugar in a bowl.
02 - Blanch the Spinach in boiling water for about 1 minute.
03 - Cool the Spinach under running water and squeeze out the water.
04 - Cut into 2.5cm / 1in sections.
05 - Mix sauce and Spinach.
06 - Sprinkle extra Sesame Seeds on the Spinach. Serve.
Notes:
- The best option is to grind the sesame seeds using Suribachi ( mortar ) and Surikogi ( pestle ), but you can also use store-bought ground sesame, but freshly ground sesame has a stronger aroma.
