TRADITIONAL JAPANESE RECIPE: Hiyashi Tanuki Udon is cold Udon Noodles with a cold sauce and Tenkasu, fried Tempura batter crumbs.

Hiyashi Tanuki Udon is a very refreshing dish, mostly served during hot days in spring and summer, but it's also very satisfying. It's very easy to make and it requires very little cooking.

'Tanuki' means Raccoon Dog, an animal found in Japan and a popular character in stories and culture. Tanuki Udon was named as a counterpart for another Udon dish – Kitsune Udon. 'Kitsune' means fox

    4 Packages Frozen Udon
    ( or 4 servings dried )

    8 tablespoons Tenkasu - about 2 x person
    ( fried Tempura batter )

    320ml Cold Water

    160ml Mentsuyu Sauce

    3 Green Onions

    6gr Toasted Sesame Seeds

    2 Sheet Nori

    4 Packages Frozen Udon
    ( or 4 servings dried )

    8 tablespoons Tenkasu - about 2 x person
    ( fried Tempura batter )

    11.28oz Cold Water

    5.64oz Mentsuyu Sauce

    3 Green Onions

    0.21oz Toasted Sesame Seeds

    2 Sheet Nori




  • Cups:

     

     

     

    4 Packages Frozen Udon
    ( or 4 servings dried )

    8 tablespoons Tenkasu - about 2 x person
    ( fried Tempura batter )

    1.25 cup Cold Water

    0.66 cup Mentsuyu Sauce

    3 Green Onions

    2 teaspoon Toasted Sesame Seeds

    2 Sheet Nori




 

 

 

Directions:


 

01 - Cook the Udon according to the package.

02 - Wash the Udon Noodles in running cold water. Strain well, place in bowl, cover with cling film and keep refrigerated.



03 - Mix Mentsuyu and cold Water in a bowl and set aside.

04 - Slice Green Onions thinly.

05 - Tear Nori into small pieces.



06 - Place the Cold Noodles in 4 serving bowls.

07 - Top the Udon Noodles with Tenkasu, Green Onions, and Nori, and pour the Mentsuyu mixture over the Noodles.

08 - Sprinkle with Sesame Seeds. Serve.
